    OK, I'm new to this, but have read that only 50% of celiacs have symptoms. Given this, how is it that "symptom-less" people were tested for celiacs? It's not like it shows up in a standard blood test. Thx!

    I just bought a cookbook called The Gluten-Free Vegan by Susan O'Brien. I haven't tried the recipes yet, but most look pretty easy and she varies the starches and seems to be sensitive to the fact that people may have other sensitivities as well.
