About Me

I'm one of the few native Floridians left :) or so I like to say! I've lived my life by and in the water. I just recently got married to my amazing husband who is unbelievably supportive of my gluten free lifestyle. He continues to modify his recipes to make them safe and to find new and healthy recipes for us both to enjoy. I love to scuba dive, read, go to concerts near and far, spend time with my family and cook. I've been a foodie since I was a child and when I found out that I could no longer consume Gluten I was devastated. I was sick for about a year after having my gal bladder removed. I asked the specialist to test me for Celiac Disease and he refused and insisted that it was something else. I decided to eliminate gluten from my diet on my own and two days later I was back to feeling like my old self. I have not returned to the specialists since and have been mainly gluten free ever since. I broke the rules more than once and have decided that the physical and more importantly for me, the emotional side effects were not worth 10 minutes of gluten filled indulgence. Now I laugh when I see the bags of "Vital Gluten" at the grocery store. I've been working on becoming healthier and have lost about 100 lbs over the past few years. I have lost 50 lbs alone since I gave up gluten.

I'm hoping to make some new friends that are in the same situation. I am excited to be on this new journey and feeling back to my old self again, but every now and then, even the most chipper of us need a little boost!

  1. My husband and I ventured to the Columbia Restaurant in St. Augustine, FL during a weekend getaway after reading about their gluten free menu. I (the gluten-free diner) was blown away by all of my choices and then how delicious the food was. My dish, the Snapper Adelita (not dusted in flour) made my mouth water to the last bite, I even had my leftovers for...
  2. All, Several months ago my husband and I booked our travel to Hedonism III in Runaway Bay Jamaica to celebrate our 1st anniversary. It was only after we had already booked the travel that I started to worry about what I would eat at our all inclusive resort, would they understand my special dietary needs and questions? Immediately I contacted the resort...
  3. Happy birthday and may God bless you today!

  4. Hey everyone! Today I dined out at Uno's Chicago Grill. To my surprise not only do they have a full gluten free menu (not just a print out off the web anymore) but they also have gluten free pizza crusts. The crusts they are using right now are premade and ordered off of gluten free.com; however the manager stated that in two weeks they would have their...
  5. I know that they just started to sell their products at the Whole Foods Market in Winter Park. I believe they're going to be selling them at other grocers soon as well. Health Food USA in Oviedo also sells their products. I had my bridal shower cake from here. We had about 30 people at the shower and they all loved it. Most didn't even realize it was...
  6. I'm not sure about everyone's location and if this brand is available to them locally, but an excellent source of premade soups is Pacific Natural Foods. Here's a list of their gluten free soups: Creamy Soups Organic Creamy Tomato Organic Creamy Butternut Squash Roasted Red Pepper and Tomato Organic French Onion Creamy Roasted Carrot Broths Natural...
  7. I too have struggled with an eating disorder in the past and have to continually remind myself to stop obsessing, especially now that I have to live Gluten Free. I find myself blaming myself for my food allergies and physical body issues because of what I did to my body in the past, but once you are diagnosed or understand that you are unable to tolerate...
  8. Hey everyone! Over the weekend my sister in law picked up a bag of Farm Rich Frozen Meatballs. We had both the Italian & Plain Style. I read the ingredients and was unable to find any containing gluten so I wrote to Farm Rich and asked for confirmation and the following is what I received: Dear Mrs. Harris: Thank you for contacting Rich Products...
