  1. Kathy, We buy the Noname brand 'lite' soya sauce (from Loblaws). It is gluten-free and much lower in sodium. (If you google how to make home-made soya sauce, you'll find that wheat is an essential part of 'real' soya sauce. You start by making a soy and wheat dough, let that ferment, and then put it into a brine for a second fermentation.) Steve
