About Me

I was diagnosed with Fibromyalgia in 2000. Suffered for many years before I discovered Celiac disease and asked a doctor about it. My blood tests came back negative but I still acted like I had it because it made me feel better. At the time I was questioning celiac, I also found out I was allergic to rice all of a sudden. This complicated things to a great deal. After a year of being gluten free, I decided maybe I was torturing myself for nothing and started eating gluten again. My pain that was diagnosed as Fibro never really completely went away. At first eating gluten seemed to be fine so I went with it. Fast forward 2 years, my health depleted greatly. So I decided it was definitely the gluten. I also have a laundry list of other food issues, lactose intolerance, hemochromatosis. Now as of today I am pain free and have been for well over a year. My health is still not perfect but at least now I know what the majority of the problem is.

  1. I was gluten free for 5 years with occasional gluten cheating and now have been completely gluten free (no intensional cheating) for 1 year before I got pregnant. I was not intentionally trying to get pregnant either, it's almost as if my body just all of a sudden decided to become fertile after years of not ever worrying about becoming pregnant. I have...
  2. Happy birthday and may God bless you today!

  3. Well I'm getting by so far. I made cookies last night. They aren't as good as I wanted them to be but with a little tweaking I think they will be much better the next time I make them, I don't think I used enough peanut butter.... for flavor. Thank you everyone for your tips and suggestions!
  4. I was diagnosed with Fibromyalgia in 2000. Didn't find out about Celiac until 2005 and I suffered with pain and bowel issues for years before that. I went gluten free in 2005 and felt much better, not perfect but better. I was in so much pain that I had already chosen to turn to some serious pain meds. I started eating gluten again after a year to test...
  5. I have been lactose intolerant for as long as I can remember, long before the gluten or anything else and one thing I noticed was there were certain dairy products I could eat and certain ones I couldn't. The two major ones I had to avoid were cow's milk and ice cream, with those I got the worst reaction, I won't go into details but it wasn't pretty. I...
  6. I'm just plain old honest. My health is more important to me than their feelings. I don't get annoyed when people can't eat certain things at my house and I would expect the same respect from them. But then again, I never been good at dancing on egg shells for anyone. The way I see it, I suffered long enough not knowing and now that I know what is wrong...
  7. Thank you all. I'm thinking about trying the wild rice thing, of course with epi-pen in hand and friend near by to drive in case it goes wrong but I miss rice. It was one of my favorite foods, hence the reason I am now allergic, I ate it as much as people in asian countries do for most of my life. Thank you for the other tips as well. So far I have...
  8. Thank you! I will definitely look into the boards for vegans and vegetarians. The rice thing definitely makes things interesting but I'm getting by. I'm not sure if I can have wild rice or not, my rice reaction is pretty bad so I've been too scared to find out. I would love to find some more "premade" foods I can have, been diligently looking. So far...
  9. I am gluten free and recently vegan. Not officially diagnosed with celiac, blood test came back negative, but I know I am at least gluten intolerant and am just going with it. I am also allergic to rice and lactose intolerant. The lactose issue was what made me finally give up my beloved cheese and follow my complaining stomach to go completely vegan....
  10. I was diagnosed with Fibromyalgia in 2000. Since being gluten free I have felt a million times better. I didn't know about Celiac until 2005 and suffered for many years with pain, fatigue, stomach issues, etc. Knowing about gluten and my other food issues has helped bring my life back. I wish more people knew and more doctors paid attention...
