I was recently FINALLY diagnosed with Celiacs. I was suffering from malnutrution, and was very, very thin. Not too long after I started the gluten-free diet, I got "refeeding edema" and gained 25 pounds overnight. It's been 6 weeks and it hasn't resolved itself. My doctors are stumped and say "give it time." Did anyone else have this experience? If so , how long did it last? Is there any effective treatment? I am miserable and feel like an overstuffed sausage! ThankS...
