  2. I've found egg replacer to add a good amount of protein for good rise to my breads. I don't know how healthy egg replacer is but it sure helps me make good bread and doesn't add eggy flavor. Also Shauna ahern (glutenfreegirl) and a couple of my cookbooks recommended millet flour. I haven't tried millet flour yet but they tout it as having good texture.
