  1. My daughter LOVES pasta, but I'm sure you all know that with gluten-free foods it can really be hit or miss. I bought some rice noodles before that were OK (can't remember brand), and we bought some quinoa/corn noodles that were edible too. But I'm wondering if you have any favorites and where you got them. Thanks!
  2. I'd love to be able to make homemade granola for my daughter. It has oats, cornflakes, oil, honey, dry milk powder, and cinnamon in it as the base (you can always add coconut, raisins, sunflower seeds, etc.) So as you can see, the only problematic ingredient is the oats.   3. I've noticed that some of recipes included on this board use oats. I thought celiacs were supposed to avoid oats? Are there any other rolled grains that are gluten free that can be used in things like granola? My daughter LOVES homemade granola and would love to be able to eat it.

  5. My 8 yo daughter was just diagnosed as Celiac. She has always needed a LOT of sleep. She is a night owl, and even if she's in bed by 8:30, we often still find her awake at 10:30 (even though we've checked her in between and turned off her lights.) She also wakes up 2-3 times a night to go to the bathroom even though I limit fluids in the hours before bedtime...
  6. My daughter had chicken pox at 2 months old. The shingles occurred twice this summer (age 8.) But I guess I'm just a bit wary because I almost felt like he's on a celiac disease crusade - meaning I felt like he was saying I feel so much better...
  7. If your daughter was gluten-free when she had the blood test, she would definitely test negative. And I thought the genetic markers were 95% accurate for predicting celiac disease. So if you disagree with the doctor, are you having the rest of the family tested anyway? Are you going to get a second opinion? Or are you just going with the gluten...
  8. My 8 yo daughter's doctor just told us he thinks it is very likely she has celiacs. She tested positive on the two AGA Iga (weak positive - 21) & IgG tests (IgG was really high - 161), but negative (2) on the tTG. Based on her symptoms and blood test, he says it's likely that she has it. He doesn't recommend biopsys on kids. She's now gluten-free...
  9. I definitely think it's do-able. I'm an LDS Mom and my daughter is the one with Celiacs. We fed the missionaries all the time and I remember one missionary with major food allergies that just handed out a list of foods he could have and couldn't have and we just all did our best. South America would be a good place to be called - lots of rice & beans...
  10. With the IgG being so high, I assume that means gluten intolerance. I'm not saying I don't think she ISN'T gluten intolerant. I guess I'm just confused because it seems like that if you're positive on these blood tests you've got a problem, so why would it NOT be celiacs.
