  1. I was raised in fayette county but I live in wv now. I understand about people not getting it, but remember you are not the only one. I think it is harder living in a biscuit/fried food region. Everything is served on, with, or coated in gluten. There is a support group for people like us in Huntsville and another one in Birmingham. Google gluten free support...
  2. Some of your gluten free flours may be contaminated. It's a scary thought, but a possibility. Here is a link for more information... Open Original Shared Link
  3. I think the hardest part is waiting to go back gluten free. I was gluten-free for 2 years before my new doctor wanted me tested for celiac. I know I should wait incase I need an endoscopy but I'm so tired of being sick 24/7
  4. I have been hunting a diagnosis for more than 2 years. Between insurance companies and uneducated doctors was beginning to give up... However after moving to a new state getting new insurance and finding a wonderful doctor I finally had the right test under the right conditions. After going back on gluten for 6 months I had a ttg test today at a free screening...
  5. Any gluten free flour works fine. I use whatever I have on hand.
  6. This is what I use for chicken nuggets to eat with pasta You can also substitute the Italian seasoning for Cajun seasoning or seasoned salt for different taste. If you didn't want to use the cheese you can add 1/2c. more crushed chex. 6 boneless chicken breast cut into pieces 1/2 c. grated Parmesan cheese 1 tsp. Italian seasoning 2 tbsp. butter ...
  7. I use Pamela's flour basically cup for cup. When baking breads I add Oran's Gluten Substitute. Gluten free batters usually need more liquid than regular batters; I make my doughs look a little bit runny by adding extra liquid. It works for me.
  8. Here is the recipe from the Cake Mix Doctor Serves: 20 Preparation time: 5 to 7 minutes Baking time: 27 to 29 minutes Assembly time: 15 minutes Cake: Solid vegetable shortening for greasing the pans Flour for dusting the pans 1 package (18.25 ounces) plain white cake mix 1 1/3 cups water 2 tablespoons vegetable oil, such as canola, corn, safflower...
  9. I have tried most of the store bought pizza crust and while some taste great I cannot get over the expense. I keep a variety of gluten-free flours at my house so homemade crust make more sense. Ive tried a couple of recipes but they turned out tasting very gluten free. Any recipes that work great?
  10. I'm not a big fan of either of the cake mixes. However, they work great as a base for doctored recipes like these: Open Original Shared Link Ive also noticed the cake has a better texture when baked into cupcakes.
  11. I have the same problem! Every time I eat anything containing wheat or touch wheat or walk into a bakery I breakout into hives and get massive stomach problems. I took myself off of wheat for 2 years. I finally got great insurance and got allergy tested. I do not have a wheat allergy. My allergist told me I had "very sensitive skin" and no allergies. She...
  12. I'm graduating in 2 weeks and I survived college eating better than my gluten-happy friends. My cafeteria really tried to accommodate me, but they kept cross contaminating things. So I cooked. In my residence hall we were only allowed a microwave. No ovens nothing. I talked to the housing staff and we came up with solutions to help me cook in my room. All...
  13. Before I went gluten free my stomach would expand up to 6 inches in 2 hours. After changing my diet completely with NO cheating for 2 weeks straight it all stopped. However, if I get glutened it swells up again and will last about a week. You have to cut gluten out completely if you want the bloating to stop.
  14. I was born with a cleft palate. My cleft is genetic from my maternal grandfather's family. The gluten intolerance comes from my maternal grandmother's family. In my case I do not think the 2 conditions are related, but I am very interested in this topic and would love to learn more!

    ARCHIVED Day 1

Here are some tips and tricks that have helped me When you make supper always double the recipe. Put one recipe in the freezer for a quick supper when you are rushed. For Lunch, buy some gluten-free wraps like Tree of Life and make sandwich wraps or pack part of your supper and take it for lunch the next day. Snacks are easy too! You can still have...
  16. My mom makes her own insect repellent with diluted vinegar. You'll smell like a pickle, but the bugs will not come near you at all! I have also used Listerine. Mix it with a bit of water and spray it on your skin. It's worked for me, and it smells tons better than vinegar.
  17. Our baker was WONDERFUL! We gave her a gluten-free cake mix to use on the top layer of our cake and the rest of the cake contained gluten. She separated the layers with cardboard. We ate off the top layer for the pictures and left the rest of the cake for our guest. We saved tons of money doing our cake this way.
