  1. hey everyone, so i was diagnosed with celiac but i do not have nearly as severe of a case as i could. yes, i had terrible symptoms and such, but i am not someone who has to use different hair products or can't walk into a bakery if you know what i mean. anyway, my boyfriend does not have celiac, so he will eat regular food. this sounds crazy, but is...
  2. i am gluten free and usually very diligent about it, too - even avoiding any potential cross contamination issues. well i had a salad last night for dinner at a restaurant and it had wheat berries in it. i didn't realize till afterwards. i surprisingly felt ok with the exception of feeling extremely bloated and gassy, which went away by this morning. i...
  3. i think that is the problem - i am using all purpose flour - which like everyone has said - is totally gummy. the recipes called for combinations of tapioca, potato and rice, but i figured it didn't matter if i used all purpose. perhaps it's just the fact that all purpose is clearly not supposed to be gluten free. i think i may invest in some rice or potato...
  4. i have made a few gluten free recipes using gluten free all purpose flour (chocolate pumpkin brownies that were originally supposed to be bread but had to make into brownies because they refused to cook! and also pumpkin cinnamon bites). i don't know if it is because i am perhaps sensitive to these things, but i feel as if there is a funky aftertaste that...
  5. thank you for that differentiation! makes a big difference. and as of right now i am taking an iron supplement t get those numbers up. unfortunately, it probably isn't doing much since i am back on gluten. my dr. just said that we will have to up my iron intake, to possible 3 supplements a day. BELIEVE ME - i can FEEL it. i am absolutely exhausted all the...
  6. thanks! out of curiosity though, what exactly IS the antigliadin and ttg and IGA and IGG? like, i am not sure what it even looks at. i did one endoscopy and it came back negative. i am scheduled for another, but this is a PUSH endoscopy this time - basically they are going lower into the upper digestive system to test for more. that is in two weeks. i...
  7. okay - here are the ranges in parentheses: Iron and TIBC: 51 ug/dl (35-155) Sedimentation Rate-Westergren: 5mm/hr (0-20) Ferritin, Serum: 6 ng/ml (13-150) Deamitated Gliadin Abs, IgA: 18 units (Negative 0-19 Weak Positive 20-30 Moderate to Strong Positive >30) Deamitated Gliadin Abs, IgG: 24 units (Negative 0-19 Weak Positive 20-30 Moderate...
  8. Hey everyone - I am back...again. I got my blood work back - they had put me back on gluten for a week to be ble to retest for celiac and other things as well. My doctor went over them with me and generally explained, but then also sent me the results. I was wondering if anyone might be able to help me decipher EXACTLY what these mean, as it is of course...
  9. i don't think it has to do with the medication, because it is something i noticed before i went on it. i have also been tested for thyroid issues (i guess just the general test, but apparently there are many specific ones that can create different results) which came back normal. i kind of attributed it to gluten, as i am back on gluten-free now and haven...
  10. i had the same question about quaker and i i actually called them. i specifically asked about the gluten free issue (despite labeling - you just never know!) and then directly asked them about cross contamination/same equipment, etc. they told me explicitly that it was a dedicated line and if it weren't, they are not allowed to declare it gluten free (or...
  11. Hi everyone- So i was diagnosed via blood test in July as positive for celiac, but biopsy came back negative. went gluten-free anyway, and it worked for a bit - i was/am very strict on it - absolutely no cheating and even a possibility of cc and i won't eat it. well it worked for a bit but then some of my symptoms came back. i had posted on this previously...
  12. i noticed that list had maltodextrin on it and other derivatives. i could very well be wrong, but a lot of the reading i have seen has since negated the fact that maltodextrin contains gluten. i have heard that it is only maltodexTROSE that is a problem. but again, i could be wrong!
  13. well all distilled liquors are gluten free, as are wines and champagnes. the only thing you can't have in terms of alcohol is beer - and they make gluten free beer! which is pretty good if i do say so myself!
  14. is harris teeter's organic natural peanut butter gluten free? I only ask because it is made with dry roasted unblanched peanuts and i know that some dry roasted peanuts have gluten in them. does anyone know if this is ok? or what about the giant brand of natural organic peanut butter - nature's promise? same thing with the unblanched dry roasted nuts....
