i think that is the problem - i am using all purpose flour - which like everyone has said - is totally gummy. the recipes called for combinations of tapioca, potato and rice, but i figured it didn't matter if i used all purpose. perhaps it's just the fact that all purpose is clearly not supposed to be gluten free. i think i may invest in some rice or potato... -

i don't think it has to do with the medication, because it is something i noticed before i went on it. i have also been tested for thyroid issues (i guess just the general test, but apparently there are many specific ones that can create different results) which came back normal. i kind of attributed it to gluten, as i am back on gluten-free now and haven... -

i noticed that list had maltodextrin on it and other derivatives. i could very well be wrong, but a lot of the reading i have seen has since negated the fact that maltodextrin contains gluten. i have heard that it is only maltodexTROSE that is a problem. but again, i could be wrong! -

well all distilled liquors are gluten free, as are wines and champagnes. the only thing you can't have in terms of alcohol is beer - and they make gluten free beer! which is pretty good if i do say so myself! -

for rice cakes i eat quaker, or mother's brand, both which explicitly state are gluten free. and i eat the bob's mill gluten free oatmeal, so why would i react if oats themselves are gluten free and it is merely the process by which they are milled that causes problems? it says on the packaging that they use separate lines and such, so i figured that was... -

i am very careful with gluten free foods and cross contamination. i do live with some who isn't gluten-free, but we don't mix toaster/butters/spreads/jellies/etc. i also check ALL labels, so even if it is processed in a plant making other wheat products i do not eat it. i am not sure my case is a very severe case of celiac since compared to others' symptoms... -
