  1. Yes, but usually it is because I ate something with "hidden" gluten. Since you are so new to the diet, there is a good chance that you are getting hit with tiny bits of gluten from your food, pans, or other form of cross contamination.
  2. When I get glutened, I drink lots of water and take probiotics. I don't know if it actually makes a huge difference, but at least I feel like I am doing something.   3. I stayed away from oats for several months, then tried a certified gluten-free brand, Bob's Mill. They assure us that their oat fields are nowhere near a wheat field and there is no cross-contamination in their processing. I did fine with it! And now I can make my own granola and love it!
  4. After being diagnosed I started a gluten free diet 6 months ago. I felt better and then worse then better again off and on during this whole time. I am now feeling better most of the time. I know my body is still healing. And I also know that most of the times I get sick tend to be because I am still learning about food safety or because I got complacent...
  5. I reacted to quinoa when I first tried it as well. Then I read somewhere that quinoa needs to be rinsed very well before we can eat it. The brand I had said on the package that it was "Pre-rinsed" but I thought I'd try one more time. So I rinsed the bejeebees out of it and was able to tolerate! This may not work for you, but if you choose to retest...
  6. Update: Over the last week I made wonderful angel food cupcakes, lemon cupcakes, and a delicious yellow cake with strawberry frosting. I had to start inviting the neighbor kids over to help eat up all the cake My spirits have lifted once again, and I am ready to have an open conversation about what that was like for me.   7. My birthday is two days away from my nephew's, so this year we decided to have a combined birthday party. I was diagnosed with Celiac last summer so I have been gluten-free for a little over 6 months now. I am highly sensitive. I was looking forward to the party at my brother's house... until I saw the food... They had a sandwich bar and cupcakes...
