My story is almost exactly the same as yours. I have been gluten free for over 10 years. Even so, I have found for absolutely no reason, I would sometimes stay awake all night long. I have finally figured out what is triggering it - certain foods I have been eating that are supposed to be gluten free. 1.) Quaker Rice Cakes - they have "gluten free" on...
