  1. I'm trying to think of how to say this... I'm 50 years old. My mom was diagnosed with Celiac when she was 44 (?) or so. She was wasting away, and the doctors took a long time to figure out what was wrong with her. To get to my point, I don't have symptoms at all like my mom with the diarrhea, and wasting away, but every time I eat wheat I get a stomach ache...
  2. I think the basic rule of thumb for adding eggs to coconut flour is one egg per ounce of flour - if you're using all coconut flour. That can be a lot of eggs! Personally I like to use the coconut flour in smaller amounts - like a couple of tablespoons. Like mentioned above, it's great in meatballs. I like it in meatloaf and salmon or tuna patties.
  3. I'm not a regular here, but I love making my own mayonnaise. A quick easy way is with a stick blender. I put an uncracked organic egg (best to use to avoid salmonella) in a pint size jar, add 2 tbsp lemon juice and/or vinegar, 1/2 tsp mustard, 1/2 tsp salt, pinch sugar, pinch white pepper, and 1 cup oil (I like to use olive oil and coconut oil).
