  1. I was actually told by someone selling gluten free pizza that while pepperoni itself is gluten free, certain companies add gluten during the curing process. I think your best bet would be to look up info on the company, or contact that company yourself. Hormel does state that it is safe.
  2. It was probably the chips. I can't tell you how many times I'll be in the grocery store looking at tortilla chips and see that they are a blend of both wheat and corn. Think about this, both corn tortillas and flour tortillas exist, so why wouldn't both forms of tortilla chips?
  3. Honestly, I think it differs for everyone. I have heard people say they felt better after two weeks, I've heard two months. As for me, I think it takes longer every time I break my diet. (Hard headed in-laws that don't understand, no matter how hard you explain celiac are the worst!)
