  1. Unless they are "Certified Gluten Free", there's always a chance of contamination from wheat, barley or rye. Some of the symptoms you're describing could be from being "glutened". I've experienced them myself. Chex has really good gluten free instant and rolled oats.
  2. I hadn't had any symptoms related to Hashimoto's. All thyroid levels were normal for me, but iron and B12 were very low. I had an upper GI that showed damage to small intestine followed by Celiac serology to confirm Celiac Disease. Supplements have helped me a great deal. I have more energy than I've had in years.
