I had tests in 2009 at Enterolab. I have not gone totally gluten-free since then, but I have avoided major sources like pasta and bread. Still I eat regular bread very occasionally and gluten-free pasta (corn and rice blend.) I still use cream in my coffee and eat cheese even though I have a sensitivity to casein.
