  1. I'm beginning to think that cooking in a 90% gluten free kitchen will NOT do the trick. I was soo sick last semester and most of the summer, even after totally giving up gluten and dairy.   7. Please understand that I am not trying to be pessimistic or depressing... Do I just have to come to grips with the fact that I will feel like sh*t for the rest of my life?   8. Hey thanks for all the great suggestions.. I'll be on the lookout for some of those brands. Not sure yet if I am lactose intolerant or reacting to casein. Is there any good way to tell other than eating something without lactose (but with casein) and waiting it out? Anything with loads of cream or milk sets me off, but I think butter and parmesan cheese...
  9. Soooo it looks like dairy will have to go, too. I will miss cheese and ice cream much worse than wheat and barley... What common soy/corn based cheese, sour cream, yogurt and butter do lactose-intolerant celiacs buy? I'm having a hard time finding some brands that are for sure gluten free.   14. I drink lots and lots of Gatorade (all gluten-free). It seems to not bother me too much, increases energy and keeps the bad headaches away.
  15. Does anyone else experience a 24 hour delay before the worst symptoms appear? My reactions normally last a week, minimum, but I've noticed that the severe bloating and nausea occur about a full day later (then living hell for the next three days).   16. Besides the ever-favorite constant nausea, dizzyness and painful 'old guy beer belly', I get super super cold for at least three days after a glutening.
