About Me

I was first diagnosed with Celiac Disease in October of 2011. In May of 2011 I had a terrible stomach flu which is what triggered my problem with gluten. I was getting stomach aches EVERY time I ate. I could eat a bowl of pasta,bread,cookie, anything and it was so annoying that I went down to barely eating. At that time I was about 118 pounds. I would wake up and eat a roll a day because that was all I was ever hungry for. Little did I know a roll was the worst possible thing I could be consuming. Over the course of about two months I lost 20 pounds bringing my weight down to 98 pounds. I'm a fairly petite girl and always have been but I just constantly felt weak and never had the desire to go out with my friends. All I wanted to do was lay in bed which was very unlike my peppy energetic self. In November of 2011 I had an endoscopy which showed no damage to my stomach but my blood work from the previous month showed my antibodies were positive for Celiac Disease. At first I was very discouraged about what I could eat. I felt like I couldn't eat anything and lost an additional pound and a half. Today I am doing much better and adjusting to eating out :)

  2. I was beyond thrilled when I found baked goods that were gluten free. With much excitement I first tried the Betty Crocker yellow cake...it was terrible. It looked like sponge and tasted just the same. I decided to give the Betty Crocker chocolate chip cookies a shot. They are AMAZING!! Forget Chips Ahoy and Keebler boxed cookies, these cookies were better...
  3. When I go to restaurants and ask for their gluten free menu I assume that when I order off of it they would know I need for it to be GLUTEN FREE. Then you get the waitresses that are spacey and don't really care nor take the time to notice that you asked specifically for NO BUN. I think its important to alert the waitress of the importance of your meal being...
