Ok, so I received the phone call from my Dr. on 8/31/11 telling me that I have Celiac Disease, and I need to start a gluten-free diet immediately......so I did that. Today is September 13th, 2011. Celiac awareness day! Why is it so important to have such a day? Because without awareness we have no voice, we will never have a cure, we will constantly suffer from mislabeled foods, accidental gluten intake, and cross contamination.       I read a research article today about how hookworms are being considered as a standard of care of colitis. Dunno about them used for obesity treatment though. The first thing I did once I figured out I wasn't reacting to gluten anymore was to head for the bakery isle. It had been 13 years..
