2 Weeks In.......

Ok, so I received the phone call from my Dr. on 8/31/11 telling me that I have Celiac Disease, and I need to start a gluten-free diet immediately......so I did that. Celiac Awareness Day

Today is September 13th, 2011. Celiac awareness day! Why is it so important to have such a day? Because without awareness we have no voice, we will never have a cure, we will constantly suffer from mislabeled foods, accidental gluten intake, and cross contamination. I am astounded by the amount of foods and products that either have gluten, or wheat flour added to them. Even the delicious salads from restaurants, you know the ones, with the adorable little bags of nuts they give you to sprinkle on top gleefully? Those nuts are coated in wheat flour. Why?       I read a research article today about how hookworms are being considered as a standard of care of colitis. Dunno about them used for obesity treatment though. The first thing I did once I figured out I wasn't reacting to gluten anymore was to head for the bakery isle. It had been 13 years..
