Help With gluten-free Restaurants + Hotels & gluten-free Paradise In Costa Rica

I am traveling all over Latin America for the last 7 months. In Costa Rica I’m already 2 months. My next stop is Florida, North Carolina, LA and Huston – I need help from you guys on gluten-free hotels & restaurants – please!!!

And a tip to all of you about Costa Rica:

As a celiac and vegetarian I had no problem with the food, not ever. I’m not a picky eater. I don’t eat sweets, I don’t eat living creatures and products with gluten.

I’m joking of course… sweets I like.

You can’t trust many :D restaurants and food stands in Costa Rica to know or tell the truth about their food.

I don’t speak Spanish so it makes life harder even in the super markets of Costa Rica.

Things changed in Costa Rica when I found a place named Lands in love www.landsinlove.com it’s a hotel & attraction center - canopy, canyoning, horse back riding, rappelling, jungle trails & rafting and the main attraction – the hotel located in a middle of a huge beautiful cloud forest – I tried the Canopy, zip lines 1 of the cables is 750 meters long – it was so exciting!!

The place run by 25 Israelis that treated me as one of their family – never been to a hotel with such a great service, they are all vegetarian that chose not to eat gluten because they found out that it’s bad for every human being. At the end I put the hand out manifest (that is given to the guests) that describe their experience I asked it from them- really interesting stuff…

Needless to say in this place I finally found my “tranquila” I could eat what ever I want – Pizzas, apple pies, veggie - burger, veggie hot-dog – you can’t tell it’s vegetarian (and it’s without gluten!!) chocolate, cheese, apple cakes, delicious cookies and the list goes on and on…use your imagination I came for a night and end up staying 5!

They encourage people to choose a gluten free diet and invite guests to share their cooking experience practical and theoretical in the kitchen.

…And I almost forgot fast internet all over the hotel, big cable television in the rooms – just name it they have it all…

As promised - The hand out manifest:

Gluten

Gluten is a protein found in many of the grains, mainly in wheat which has the largest percentage of it.

Wheat Flour contains between 8%-12% gluten (Canadian wheat contains 15%+ gluten).

Gluten, a protein hard to digest, causes intolerance in part of the population, stimulates the intestine mucous membrane and causes liquid absorption that irritates the immune system.

Modern medicine indicates a connection between gluten and many common diseases such as sclerosis, diabetes 1 & 2, gout and a variety of allergy symptoms.

We (50 healthy persons) held an experiment on ourselves and excluded the gluten from our daily nutrition. For three months we ate gluten free food, combining alternative products such as corn flour, rice flour, beans and legumes without reducing our calories consumption.

In the first week we all experienced edema reduction, and all participants lost 6-11 pounds of their weight due to body fluid retention.

During the experiment none of us has been sick in any kind of flu, cold or hay fever.

Metal allergies, digestion problems, asthmatic seizures and rashes ceased. Chronic anemia and arthritis have improved.

Blood sugar level of two diabetics balanced without any severe sugar drops.

Our hair and skin have improved as well as our looks and feel.

Adding back the gluten to the diet, illnesses and allergies returned, and in just two days we gained back the weight we lost.

After the experiment, thirty five of us continued the gluten free diet and we are healthier, feeling and looking better than ever.

* Researches indicate that the poor population in Central America are healthier than most of the poor population in the rest of the world, because their diet contains less gluten.

I recently came back from a 2 weeks tour around Costa Rica with my family.

Me and my mother do not eat gluten, and whenever we abroad we use to the fact that it's not easy to find good & healthy things to eat. before this particular trip, however, I decided to check this forum and I've found this post about the gluten free hotel in CR. I included this hotel in my plans and after checking it myself, I'm happy to tell everybody that this is indeed a paradise for gluten free eaters. The staff is very friendly and welcoming. All of them are veggies and do not eat gluten. When they made this place they took into mind all the people with special diet needs like me and they made all the effort to make my stay there unforgetable.

I enjoyed every minute there (and ofcourse every meal). I felt free to eat everything they served. many meat & chicken substitues and bread & pastry with no gluten in it.

If you are around CR and would like to enjoy yourself with no fear- this your place.

      This treatment looks promising. Its aim is to provoke immune tolerance of gluten, possibly curing the disease. It passed the phase 2 trial with flying colours, and I came across a post on Reddit by one of the study volunteers.       Hi everyone  This has been a crazy year so far... How many people actually get entire sensory overload from gluten or something similar ?  My jaw is going nuts ..and that nerve is affecting my upper back and so on ...  Bones even hurt.  Brain fog. Etc  I had eggs seemed fine.   Then my aid cooked a chicken stir fry in the microwave because my food order shorted a couple key items .   I was so hungry but I noticed light breading and some ingredients with SOY !!! Why are we suffering with soy ? This triggered a sensitivity to bananas and gluten-free yogurt it seems like it's a cycle that it goes on.  The tiniest amount of something gets me I'm guessing the tiny bit of breading that I took one tiny nibble of ...yikes ..im cringing from it .. Feels like my stomach is going to explode yet still very hungry 😔  How long does this last?! Thank you so much

      I have had orthodontic work done. The 3M invisalign material was no problem. BUT my retainers are another matter. They seemed okay for a few months. Now, however, they cause a burning sensation on my tongue, gums and insides of my lips. The burning sensation is now spreading to my throat. I notice it when I breathe. This is annoying and interferes with my enjoyment of eating. I am visiting with my provider tomorrow. We'll see where this goes from here.
