Remember the no bake cookies with quick oats? I was having a craving for chocolate and peanut butter. I replaced the oats with gluten-free krispy rice cereal. Really hit the spot!

No Bake Cookies

2 c sugar

2 T cocoa

1 stick butter or margarine

1/2 c milk

combine above in a large pot, bring to boil. Remove from heat.

add 1/2 c peanut butter and 1 tsp vanilla, mix until peanut butter melts. Add 3-4 cups gluten-free krispy rice cereal, mix until cereal is coated. Drop by the spoonful on waxed paper or press into a pan and cut into bars when set.

      I put on over 12kg by eating protein with every meal, 3 to 5 times a day. Eggs, Chicken, Tuna, Turkey etc. I stay away from too much red meat as it can be inflammatory. Scott is correct. I've come across a bunch of Coeliac PT's on Tiktok and Instagram. They all say the same thing, the key is getting enough protein and consistency.

      Trader Joe's carries a good variety of affordable gluten-free foods like bagels, hamburger buns, pasta, etc. I like Franz Gluten Free bread, which is available at my local Costco. Food For Life and Little Northern Bakehouse (advertisers here) also make excellent gluten-free breads. Costco also sells gluten-free pizzas, crackers, gravy, etc.
