  1. Be wary of low cholesterol numbers. They can lead to psychiatric symptoms and seizures. If you do an internet search for celiac disease and low cholesterol you will find many people reporting these problems.
  2. You might have a vitamin B12 and/or folate deficiency resulting from malabsorption. This leads to anemia resulting in low oxygen and high CO2 to the brain.
  3. Check out vitamin B12 and folate deficiency. What happens is that too few blood cells are being produced and therefor not enough oxygen gets to the brain resulting in blackouts. The condition is called macrocytic anemia. It is the result of poor absorption of those vitamins due to the damaged absorption villi in the gut.
