  1. Do know that risotto homemade is easy and can easily be made gluten-free! As a chef...you use only onion, olive oil, arborio (or other specified risotto rice), chicken stock (gluten free of course) and butter and parmesean cheese. If you want to flavor it - you can add any sorts of veggies (I love it with pureed butternut squash or peas) or even ham, shellfish...
  2. Thank you both for your responses - turns out my IgG is elevated so they are referrring me in for the biopsy. My gut (hah) is telling me I am indeed needing to be gluten free. For now, however, I'm eating it up to make sure my results come out. Turns out it seems to in fact exist in my family, now that I;ve brought it up. Just, no one has been diagnosed...
  3. My last baby - now almost 9mos - was born 6 weeks premature. He had all the normal preemie probs, but came home from NICU after 8 days (just in time for Christmas!) He is now a whopping 21.5 pounds, so no eating issues there. I also had trouble getting pregnant with my first child, and am curious about infertility and celiac. I am still awaiting test results...
  4. I'm new here, and I just am confused about lecithin as an ingredient. I have been gluten -free for about a week, but have still used cooking oil spray and a protein powder with soy lecithin...only to read that it is a potential trigger? Is this true?
  5. I've noticed that applegate farms declares some of their meats (roasted turkey breast for one) as gluten-free. I don't know if that's the one you've had, but if it is...either you have another trigger or they are incorrect! I agree with the "avoid" luncheon meats advice. There is so much excess sodium anyway.
