I have decided that I'm going to go gluten-free (without tests) maybe Enterolab soon, but I'm going to start gluten-free soon and I was wondering what everyone's staples were that are always in your kitchen besides the usuals (potatoes, eggs, rice, veggies, fruit, meat). I don't mind baking at all so that's not a problem. Also I know this may not be right...

  3. Okay, I have another question and yes I am paranoid about some stuff. If you test through Enterlab does that mean it's a medical dx? Like could you take it to your doctor and have no further testing yet still say you have Celiac or intolerance? My bf and I were talking about it again tonight and I told him about Enterolab: along with false negatives...
  4. Thanks for your responses everyone. I have one more question. If you get a dx that you are...granted there could be complications to health...why do insurance companies turn people with celiac down if it just means staying gluten free?
