    You can, but with cakes, muffins, quick breads and cookies, you'll need to add xanthan gum as a binder. My general rule is scant 1/2 tsp xanthan gum for every cup of gluten-free flour. Too little will create a very crumbly product that won't hold together and too much will create a dense, almost gummy textured product.

    I know the Pamela's would be great--plus its easier since you leave out 1/2 the ingredients! I used to make it that way, but I can't/don't do dairy anymore so I save it for my kids Haha! We post at the same time and essentially the same thing!

    Yes, but omit the baking soda, xanthan gum, salt and decrease the oil to 1/2c! Let me know what you think if you guys try it!!     I only make gluten-free cakes. I don't cook with any gluten at all. I've recently started a cake decorating business and even doing 1 a week--my mixer isn't big enough. If I do a cake for more than 30 people, I have to mix the cakes in 2 separate batches. It's a pain!
