    I'm trying to balance my carbs with protein, but am getting sick and tired of eating meat with my snacks.     I had my gallbladder out in May 2003 after a few horrible months of illness. It was only functioning 1%. Now that they have figured out I have Celiac, I think the gallbladder only had to be removed because they missed the Celiac, however, I wonder if by that time it had to be removed anyway because of being damaged.
