  2. I was wondering if anyone has been able to maintain negative bloodwork (after initially testing positive before starting a gluten free diet) by still eating foods made in a shared facility. For example, are you still negative even though eating things such as Nut Thins, Fritos, some kinds of Doritos, etc.

  4. My 9yr old son was diagnosed a little over a year ago with Celiac. He has been gluten free since April 2007. I'm not an expert on the testing so I'll try my best to describe his results (Endomysial Antibody IgG+IgA was 1 in 20,480 pre diagnosis, 1 in 640 after 3 months gluten free, 1 in 320 after 7 months gluten free, 1 in 160 just recently after 13 months...

  6. It's great that Disney is gluten-free friendly. I'd like to take my son who has Celiac there someday. My question is how do you go about planning the trip? Do you have to make reservations months in advance so that you can eat at certain restaurants or stay in certain resorts? Can you do that online at their website or should you go through a travel agent...
  7. Thanks everyone! I didn't want to buy a whole bag of flax when I only needed about 1/4 cup. I've never used it before, and didn't want the rest of it to go to waste. Although, maybe it's time for some experimenting.
  8. I saw it in a dough recipe. The recipe also called for eggs so I don't think it was intended to be an egg substitute. I didn't realize that flax meal could be used as a substitute for eggs so maybe I can just substitute a high protein gluten-free flour instead.

  12. Hi. I'm new to the forum. I have an 8 yr old son diagnosed with celiac (by bloodwork and endoscopy). His only symptoms have been slow growth and stomach aches.
