  2. We use Bob's Red Mill Chocolate Cake mix, it makes a great chocolate cake. We also have Kinniknick (sp?) white chocolate cake mix that's gluten free, but it is much more labor intensive.
  3. I'm somewhat stuck when it comes to lunches as well. My son just started going to preschool part time Tuesdays & Thursdays from 8-12:30. He has a snack time and lunch time. So far for snacks I've packed gluten free pretzels from Glutino or I'll do a cheese stick or Gogurt. For lunch I pack salami or diced turkey keilbasa, almond nut thin crackers...
  4. Yes I can't agree with you more, doctors everywhere need more education regarding Celiac Disease. We went through several doctors before finally finding a ped that recommended a specialist three hours away. We went from a local doctor to the pediatrician an hour away and then at the ped's office we headed 3 hours away to Boise Idaho to see a ped gastreoentonologist...

  9. I have a question regarding McDonald's I thought they were ok as long as you steer clear of the bread. My son has a plain hamburger patty with nothing on it. Our local McDonald's doesn't use oil containing gluten so he has been ok eating the french fries. My son has a very low tolerance to gluten, he almost died at 16 months of age from celiac disease...

  13. I just wanted to share with you that my son had an endoscopy done to get a diagnosis of Celiac Disease. He was only 16 months old.
