About Me

I am 23 years old and have just graduated from a dietetic internship. I was unofficially diagnosed with Celiac Disease last year post-surgery and have since discovered that food sensitivities and allergies of any kind are a weakness in the dietetics community. It is my goal to help change this.

I am a practicing dietitian. If anyone would like my professional or personal recommendations on resources, food, or just have general questions I am happy to give advice. However, it should be noted there are many on this board with more practical gluten/gluten-free experience than myself.

  5. I wouldn't go on a Casein-free diet until you have given the gluten-free diet a solid 3 months. It takes your intestines that long to completely heal. Lactose might be something to consider, though, only if you are noticing difficulty digesting dairy products. This may or may not resolve once your intestines are healed.   6. The labeling laws for listing wheat on the food label are mandated by the U.S. FDA. In New Zealand, different rules may apply. I have never heard of issues with vanilla extract.

  9. I concur with the other responses. I bought a giant economy bottle before I was diagnosed (last summer) and was still using it. Well, I had this nausea that just wouldn't quit for a few months.
