And, Vanessa, just to try to ease your fears...my 7 and 9 year old daughter and son had scopes back in August. They both did great. No problems at all. I'm glad you're going to a Children's Hospital. I've had great luck with Bette Hagman's "The Gluten Free Gourmet Bakes Bread". My girlfriend gave it to me for Xmas (she is so supportive of my gluten-free-ness!! It feels really great to have that kind fo support.) I used to only use Manna from Anna for my bread machine. I still like it, but I've been having a ball playing with the bread in Hagman's book...

I also gained a little bit. (I was in the normal range for my height before, still am) My dietcian said that's good, because it means my intestines are healing and absorbing more. And, yes, emotional reactions to gluten are very common, as you've read here. M

I am very lucky. I live in the Boston area and got to see a dietician who has Celiac herslef. It was GREAT! Then, took my kids to see one at Children's Hospital and while she was pretty knowledgeable, I still knew more than she did. So, if you are in Eastern MA and want a name, let me know. Michelle

If one was trying to see if lactose was an issue (a non-celiac person), how much dairy should they cut out? Just obvious dairy or baked good with dairy, too? Thanks, M

Try a regular gingerbread cookie recipe, just sub in a gluten-free Flour mix (I use Bob's Red Mill) and about a tsp of Xanthan gum per two cups of flour.
