  1. My doc recommends Benefiber. Worked well for me. Then my dietician had me and ground flax seed, and I phased out he Benefiber. All of that rice and white flour (potato, tapioca) and be binding for sure. Good luck. Michelle
  2. Re; conr tortillas...my favorite lunch is corn tortillas spread with gluten-free refried beans, cheese, sometimes chicken...then toasted in the toaster oven. Very yummy. As for bread...you all need to try Manna from Anna mix. It's awesome. Anyone try it and not like it? Enjoy! Michelle

  4. Looking for a Manna from Anna review...heard it's great...it's damn pricey, though. How many loaves from a package? Do you have to freeze it once it's baked or how long does it last? Thanks! Michelle
  5. I use Bob's All Purpose gluten-free flour mix cup for cup, and most often just toss in a tsp of Xanthan gum, no matter how much flour! LOL! It all seems to come out fine, despite my lack of exactness on the X gum. Bob's has bean flour in it, so the batters/doughs smell kinda funky, but there is no bean flavor at all in the finished product. Good luck...

  9. HeatherMelissa...I fully agree about baking, I think Molly posted it. I use Bob's gluten-free Flour mix and Xantahn gum and have made choc hcip cookies that were among my best ever and brownies that are exactly like my old wheat flour brownies. Not real healthy in general, but a good treat when the kiddos need one! Good luck! Michelle

  12. YES!! It was sooo beany! I had my girl friend on the phone (she is so supportive, despite living 3000 miles away, she insisted on "being there" while I mixed, baked and ate one!!). I said, "eeeew, it tastes like beans!!!" Amazing how that goes away during cooking! What other recipes have you had success with using Bob's or another pre-mixed flour blend...
  13. I was going to try the "regular" Toll House recipe with Bob's Flour mix and Xanthan gum, but I was unsure about Xnathan gum ratio to flour. So, I decided to look at Bob's site to see if they had a suggestion. Instead I found a recipe, so I tried that one. I swear, they are in the top 5 of ANY batch of choc chip cookies I have EVER made!!   14. I'm not real careful about cross contamination...at least not compared to some things I've read on this site. I use the same toaster oven for all of my family's food, same pots, pans, dishes, etc. I do use different cutting boards or plates, whatever, if I'm making sandwiches for all of us. I don't always wash my hands after handling gluten containing products...
