  1. Hi there, I know that spelt is a distant cousin of wheat, but from what i've read it's supposed to be easier to digest than wheat. Has anyone tried it and what reactions did you have to it? We bought hamburger buns, out of desperation, at Whole Foods and my husband had one roll just to try it out. Will see what happens. Keeping our fingers crossed...
  2. Next time there is a Gluten-Free Vendor Show in Atlanta, GA, let me know. I always find out about events after the fact.
  3. Hi everyone, Just checking to see if anyone out there knows if there's any celiac disease Cruises planned for 2005 or any celiac disease conventions planned in the Southeast? We live in Orlando, FL and would really like to go. It would be nice to have a celiac disease only Cruise and not worry about what you're eating. Also have cooking classes and...
  4. My husband and I are from Mouse country and Hurricane Central Orlando, Fl. Jean
  5. My husband has celiac disease as well as Lactose Free. We shop at Whole Foods every 2 weeks or so to get supplies. They have a great selection of different things from Flours to pasta, gluten-free breads and alot more. The store in our area, Orlando, Fl, carries chocolate chips that is gluten-free and Dairy Free. It's called Tropical Source Semi-Sweet...
  6. I've just got up enough nerve to start making bread. I've tried a couple of Bette Hagman's bread receipies, but the one thing I had trouble with is over baking the crust. With the first loaf, it came out a little under cooked, of course it sunk a little. The inside was a little rubbery and had a slimy texture to it. The crust was way to brown. The second...
  7. On this topic of cookies, does anyone have a good receipe for Sugar Cookie? It's the one cookie that my husband loves at Christmas time. Thanks, Jean (Wife of a celiac disease)
  8. My husband has celiac disease along with the lactose problem since April. He does have bad days when he accidently gets into something that's contaminated. His system also can't handle too many oils, especially from any type of peppers. Worse than the bad reactions to foods, are the days when we go out shopping or just running around the mall and he...
  9. Thanks everyone for your suggestions. Will have to make a list for the next time. My husband can't handle peanuts so that's out and so is the sardines He does like Soy Nuts though. Hopefully, that's the last hurricane for this year. That was a bit scary. As a thought, I do have a trail mix that my husband can eat. If you can handle soy nuts,...
  10. My husband and I just went through Hurricane Charley and realized that you don't have much choice for gluten-free foods when the lights go out. What are some good healthy things to pack (that don't require refridgeration) for these kinds of emergencies when you don't have electricity. Luckily, we got our electric back by Saturday afternoon, but I bet there...
  11. My husband and I love Miracle Whip Salad dressing. I think I saw somewhere that it was gluten-free, but dang if I can find it now. Any info would be great. Wife of a Celiac, Jean
  12. Well, you can do what I do. I have a small lunch bag that looks more like a purse that I take with me when I know we're going out to eat. In it I put small containers of my husbands favorite salad dressing, Butter (Lactose Free), a couple of rolls, Ketsup and Mustard if he needs it. To keep things cool, I'll put in a small ice pack. This really comes...
  13. Thanks for the warning. We do get our bread from Whole Foods in Winter Park, FL and it comes from Deland. Wonderful. Do you know any other place in the area where you can get bread, Millet or another kind that would be good. I would order on the internet but it seems crazy to pay postage and have the bread sit on the porch in the weather and bugs...
  14. We have been using Millet Bread for the last 4 months that my husband's been gluten-free. As far as we can tell, he hasn't had a reaction to it. I became concerned when I found this: Open Original Shared Link and it listed Millet as containing Gluten. In the Bette Hagman Cookbook, it listed Millet as being gluten-free. What is everyones opinion...
  15. My husband loves Rootbeer, so a friend of ours found these two that are gluten-free, Mugs Rootbeer: Open Original Shared Link Virgils Rootbeer: Open Original Shared Link Now he's a happy camper. Wife of a Celiac, Jean
