Well, my Mom got me "Sustenex." I wasn't sure, but after checking it out on their site, they ARE gluten free! Now, I don't wanna get anyone's hopes up or anything....but I was still on the "loose" side even after several weeks of a gluten-free diet....as SOON as I started taking this probiotic.....I mean the VERY NEXT DAY.....I had nearly normal stools... -

We've only been gluten free for a few weeks...but it does get easier! As fas as grab and go breakfasts....I eat toast...I like that Kinnikinnick bread w/some jam...super fast. There's also some new Jimmy Dean breakfast bowls out there...they're GOOD...they've got eggs, ham or bacon, potatoes, and cheese. If we're talking REALLY fast...I go with a boiled... -

I wonder if I should start taking a probiotic?? I've heard that they're good...for....ahem......loose stools. Wonder if it would help me? That's what's got me so irritated about that whole recipe. See, the other day, when I was at Publix...I SAW coconut flour and thought, "Nahh..I don't need that..." So I didn't buy it...then when I went back...they didn't have it!!! I've been kicking my own butt for DAYS now. Ugh!

Ok, so we tried the coconut chicken last nite....since I couldn't find the coconut flour, I used rice flour.....I might not do that next time....or I might just back off on the amount of flour. It was just a teensy bit mealy...just a TINY bit...it WASN'T bad though..... ...and that apricot/dijon sauce was FAB!!!!!!!!! And I made a rice pilaf...

Well, it looks like it's a moot point anyway....I went to Publix, where I first saw coconut flour, and they didn't HAVE any. I KNEW that I should've bought it that first time I saw it. Man, Gorilla Munch is da BOMB!!!!! That stuff is like kiddie crack! My husband have found ourselves wanting to HIDE it from the kid so that WEEEE can eat it. Anywho--I was surprised to find that Trix, Cocoa Puffs, and Fruity Pebbles are all gluten-free....hope that helps! -
Ahaaa! I didn't know about that!!! Now things are starting to make a little sense. Oh, and I forgot...in addition to backing OFF on the milk...I also had my doc start me on a series of B12 shots...I think that first one might've kicked in yesterday......I kinda cleaned the @#$% out of my house!!! Ugh---and it NEEEEEEEDED it too!

Thanks guys...an update...I've backed off a GOOD BIT on the milk...no more cereal for now...I just use milk IN things...and it seems to be helping. As a sidenote...I would like to share with you the dangers of buying cheap toasters. So I went to Dollar General and bought a $5 toaster for my Kinninnick bread...(to which I've quickly become ADDICTED...

Ok, so I've got a TERRIBLE CRAVING for coconut chicken. I used to get it from Super Suppers...but I just don't want to take a chance of getting glutened...so I found a recipe that sounds identical. FREAKY!!!!!!!!!! I don't BLAME you for being a little wary! I've slept thru a shot....but I was on a LOT of morphine...(pancreatitis/gall bladder--ugh). I can take Ambien without any ill effects....I even pop right awake after about 7 hrs....but that Lunesta....that's some freaky stuff. I wonder about that new stuff....it starts with an "R" like rozeram... -
Thanks...I don't mean to be whining and complaining...I just think that the false hope (AND hormones!) probably got to me this week. I think that when I felt better right from the start, it lulled me into this sense of security....I was like, "YES! This is IT! I'm finally going to get BETTER!" Only to have whatever happened....be it accidental glutening...
