  1. Yes, that's what I do. I use Rice Chex and Corn Chex and grind them in the food processor. Then I take 1/2 cup of mayo mixed with 1 tablespoon of dijon mustard and mix it. Coat the chicken with the mayo mixture (just rub it on lightly) then coat in the Chex mixture. Place on a baking sheet and spray with no stick spray. Comes out REALLY crispy and tastes...
