Gluten free as of March 1, 2010, for auto-immune issues, no confirmed celiac disease.

  1. Have you been diagnosed with a specific auto-immune disease? I have Hashimoto's Thyroiditis and Polymyositis. The Polymyositis can cause severe muscle pain and weakness. Have the Dr.s ever checked your CPK levels? Are you on any Statins (Lipitor, Crestor)? They can cause rhabdomyolysis, the severe muscle pain/weakness they talk about in the commercials...

Lunches that have worked for me: Homemade hummus with rice crackers or carrots Quinoa greek salad Tuna and avocado salad (can't do any dairy at the moment) Dinner leftovers Almond butter with celery or on rice cakes tamales I try to find time on the weekend to make some things to take for lunch as eating out is nearly impossible.
  3. Hi Magpie- I think you should seriously limit your contact with this person, she's evil, dangerous & mean (lobster on your plate???)! As a fellow fiber nut(knitter & spinner), you deserve large quantities of yarn every time you need to deal with her! Hope you can move away soon.
  4. I've only been gluten-free for about 20 days, but I can definitely tell a difference in the lack of food cravings and don't seem as hungry as I used to. Still want something sweet after lunch, but have been eating a lot less at lunch and dinner and losing weight! For me, at least now, some of the joy has gone out of eating because I'm still not sure...
  5. This is only my 17th day being gluten-free, or trying at least. I have been to Wegmans a few times. I bought Pamela baking mix and made a pretty decent coffee cake with it. Hope to try pancakes this weekend. The Envirokidz cereal is pretty good, tried the Gorilla crunch, and it's a reasonable price, saw a box of Gluteno this morning for $6.50?? at...
