  1. A friend of mine is a seller of this product which she started taking a year ago . She has severe digestive and colon problems and 1 of her kids is asthmatic. She feels great and her son is not using his inhaler regularly and she believes it's due to this product. Its dehydrated fruits and veggies in capsule and/or gummy form and claims to be gluten free.

    I was wondering if any Celiacs are using it (she has 2 references but neither one of us knows these families) and if they have seen any improvements with their child or themselves.

    My girl is high BMI , her ht is 97% and wt 99+% . She was never the underweight norm of Celiac always been the opposite with food issue's. Mentally she psyches herself out and throws up any new veggie I ask her to try. This is an opportunity to get more good foods into her system. ( Not a vitamin or diet ) just an extra food source.

    I am not recommending this product I just want to know if anyone is using it and what their results are.

    garlic

    ginger

    cumin

    sage

    thyme

    rosemary

    Basil

    paprika

    chipolte

    A few idea's

    wheat free soy sauce (with garlic and ginger on pork chops ) or ( with garlic and touch brown sugar on steak / burgers)

    olive oil, lemon juice and italian herbs make a simple dressing for salads or marinade for chicken/turkey

    (cumin , chipolte , garlic , paprika) for chili's

  3. Every child is different, my dd is on year 2 of gluten-free and she is less adventurous in her eating habits than before dx. She will gag and throw up any new veggies . She wants her empty carbs and meats. Her fruits are now down to mainly apples and I have to force small amounts of grapes , pears and watermelon on her . Before Dx she used to enjoy other fruits and would at least try a veggie without vomiting it up.

    I have tried hiding zuchhini , eggplant, squash etc.. in sauces and meatloafs etc.. and I can only get away with small amounts as soon as she sees the flecks of color she is turned off. I am getting desperate and am turning to a whole foods product that is dehydrated and powdered form of veggies and fruits . Since I haven't started yet I can't recommend it but I will let you all know.

    ALthough whole foods are always the best way to go if I just can't get her to keep it down I had to turn to other sources.

  4. Hello ~ my name is Rebecca and I have a nephew who has Celiac Disease. My sister typically just bakes a gluten-free cake mix but I wanted to do something more homecooked for my daughter's birthday celebration at my house.

    We are having a birthday party for my daughter and I wanted to make a flourless chocolate cake pops. I want to make 100% certain that the ingredients I will be using are safe. Can you all help me?

    the recipe is as follows:

    butter

    *semisweet chcolate chips (for this I was wondering if I can use Hershey's Special Dark chcolate bar instead as I know regular choc chips from a standard store is not safe)

    eggs whites and yolks

    regular sugar

    confectioners sugar

    *Frosting - this one I definitely need assistance in which brand is safe.

    I would appreciate any input or advice so I don't get my nephew sick and we are able to have a festive birthday party for my daughter.

    Are all of these ingredients safe?

    I use Nestle dark chocolate chips . I am unaware that they are unsafe but if you want to you can use their bar and break it up.

    egg,,,sugar...confectioners sugars are fine I use any brand for these.

    frosting = Betty Crocker has many gluten-free flavors it says Gluten free on back if safe , Pillsbury has a couple gluten-free flavors mainly vanilla and choc, again it says gluten-free on back

    Since you are not a gluten-free house a few cooking safety tips. Bake the cake in a disposable pan (just to be sure) and mix ingredients in a very clean glass/steel bowl using non-wood, non-plastic utensils. If using butter make sure its from a new stick untouched . Do not use your hand mixer because it is contaminated with gluten, borrow a gluten-free one or use your bicep power.

    I am sure your nephew will really appreciate your effort.

  5. I saw this, too. We are using LOTS of miralax. Can I ask you if your daughter had a lot of constipation with Celiac? My daughter gets constipated to the point of impaction and having diarrhea and it is so frustrating!

    My DD had impactions with a stretched colon and we used this for over a year and occasionally had to do Pepto Bismal on weekends for extra clean outs. Going gluten-free changed it pretty quickly. We stopped using it almost immediately. With no problems except the normal CC issue's

  6. I am glad it is someone else's child and not just mine. : ) I have one daughter who complains of belly aches alot. Some are just because she gets full. Ironically, this is NOT my celiac child. I used to freak out and tell my husband that she was getting celiac. Then we realized it was at bath time, bedtime, and time to clean your room time.

    Then she knows that I already fear that she'll get it. She came in this week and said "My belly hurts. Do you think it is celiac?" I sat up and started to ask a bunch of questions and she said, "Just kidding, it hurts because I did the slip-n-slide yesterday!" I hate when she pushes my buttons.

    But on your son...just keep doing what you are doing. Maybe ask his teacher what is going on? We have a friend who just found out that their 9 year old daughter was showing up to school in a sling and telling the teacher she couldn't write. She was totally fine. The parents were called. I laughed because it wasn't my child. Anyway, I hope your son IS faking it because I don't want him to be sick that often. I wonder if you said that you'd take him for more blood tests would that jolt him. I said that once to my faker and she told me "Take me. Take me now." I knew then she was serious.

    My DD has done a lot of "I'm not feeling well enough to go to school today" And no : TV, video games or a trip to the DR's , will deter her, and I know she is faking it at least some of the times. I tell her no fever = no stay home from school. The nurse and I are on first name basis and she agrees with my standing. We have an understanding( only if its tummy related) 1st visit gets Tums and a few minutes of rest and back to class, 2nd visit gets a phone call to me and we decide from there if its real or not.

    Most of the time there is no 2nd visit and if there is I give it the proper attention. There were 2 occasions when she came home with a fever of over 100 and she said nothing to me or the nurse so sometimes you just never know.

  7. Check the meds & pet foods as suggested. Also, re-check the processed foods she is eating regularly. I can't tell you how many people eat stuff like Corn Flakes not realizing they have malt (barley) in them. Also, make sure she doesn't think that Rice Krispies treats are gluten-free if anyone elses Mom makes them, & that sort of thing.

    Tell the 2 GEs (gluten eaters) in your family that something is still wrong and drastic measures must be taken. Make sure they haven't been using the same colander for thier pasta or her PB. Maybe they could cut way back or eliminate gluten in the house.

    Is gluten still being consumed in the house ? If so something is getting into their diet. As stated above check meds,vitamins, shampoos body wash etc.. check all dressing, marinades and mixed spices.

    Make sure shared colanders, toaster, and /or double dipping into open shared jars is not occurring.

    Your younger dx may be more sensitive so you have to be extremely careful. If more are celiac than not you really should be completely gluten-free in the house. Majority rules is for safety sake, not inconvenience sake .

    I am new to everything gluten free. I have to see a specialist in order to even be diagnosed, but my gastroenterologist said I should try going gluten free in the meantime to see if my symptoms improve. I have been pretty strict for a week now, but now I'm ready to start making my own breads/cakes, etc...

    I know there are many commercial mixes out there, but I'm starting off with trying to cook from scratch. I purchased some gluten-free all-purp flour (Bob's) and some xanthan gum. In most recipes, would you suggest adding the gum to the gluten-free flour? I have yet to eat anything gluten-free but some Glutino pretzels which I think I like more than my favorite wheat pretzels so I'm trying to be optimistic. Also, is there a good, low carb sandwich recipe you could share with me (or direct me to?)

    Yes as Lisa said, very bad idea to go gluten free before testing it completely skews the results. FYI , It does not sound good of your GI for suggesting this.

    Question what kind of specialist are you seeing because for Celiac you see a GI which you seem to under the care of already.

    BTW 1 week gluten free is not long.

    Adding xantham gum to gluten-free flour recipes is needing in breads, muffins and many cookies. There are few to none low carb gluten-free bread recipe mixes without getting into mixing your own flour blends consisting of sorghum, millet etc... the hardier grains.

    You can get a bread mix like King Arthur bread mix and sub out 15-20% of the mix with KA resistant corn starch or KA gluten-free hearty grain flour which bulks up the fiber , which I do and it works out fine.

    However I wouldn't change anything till you get your blood work and/or endoscopy done first.

  9. Firstly I am celiac and was diagnosed in November 2010. Since being gluten free I am so much healthier. As a result of my celiac disease I had all four children tested for the genes. My youngest son, Grady has two celiac genes and we were told that it is almost guaranteed he will develop celiac disease it's just a matter of when.

    Since then Grady has had blood tests every six months and slowly but surely his antibody levels are increasing but according to the doctors not enough to refer him to a specialist for a biopsy. Grady's behaviour is a concern. He is an angel one day and a little demon the next almost like he suffers from ADHD.

    Grady doesn't have any specific celiac symptoms but neither did I. My instincts tell me he is most likely celiac but I don't want him gluten free before an official diagnosis because in Australia if you are not diagnosed with a biopsy you are not eligible for any new celiac treatments which are starting to be offered.

    Has anyone out there had major behaviour issues with their children prior to being gluten free.

    Yes my daughter was highly emotional, short tempered , cried easily and sensitive . The symptoms started to disappear within 2 weeks of going gluten free. Took 8 weeks for a close to full change.

    I need to ask, what Celiac treatments are you referring to? Here in the U.S. there are no "treatments" other than diet that I am aware of.

  10. So when I asked our GS troop leader if we could change the brand type of the a few of the foods for their campout to make it safer and less confusing for the leaders and helpers this is the response:

    It's actually easier for me if your girl and the other two girls have their own food items sent in by mom. That way someone who's not aware of the issue didn't get the wrong item, and it slips past us. We can be confident that she and the other girls will have safe foods. We will also make it as seamless as possible so the other girls in the troop have no idea, just like last year.( last year I attended and did everything for my girl this year I cannot attend)

    You should provide items for your girl that will not be safe from the general supply (breads etc) Please also supply her own labelled hotdog/s'more stick. Anything that you send to cook with for them should be labelled, and we will keep it separate and just for your girl.

    The sad part of this very politically correct response is (not that she will even hear me out on this) is that by changing the brands it makes it easier and more "seamless" for them to deal with. The fact that we have to be peanut free for that allergen girl says it all...

    I just wish people would open the dialogue so I can explain how much easier it is to change a brand than to have separate items. BTW we are talking hot dogs , snacks (pretzels and popcorn) and yogurt.

  11. I am a quinoa girl myself, but the family loves rice, especially wild rice. All the wild rice mixes that are gluten-free are not that great. So, I have made it a few times from scratch. I suck at cooking rice, apparently. Plus, it takes FOREVER and I just don't have that kind of time after work.

    Can anyone recommend a rice cooker that I can cook rice with broth instead of water, include veggies (onion, garlic, etc.) and has a delay start timer so it can start while I am still sitting in traffic? Also, if the cooker has another function (besides rice), that would be great too. My husband is getting sick of my kitchen gadets. ;)

    My rice cooker also includes a steamer basket and I have included broth , tomaoes and bags of frozen veggies into the rice. No timer though . It's a Rival.

  12. We have had parties that I organized in the past and we did this :

    fruit platters with fruit arranged in a design

    cheese and tortilla chips

    gluten-free pretzels

    popcorn

    tortilla chips and salsa

    for sweet treats : jello cups, hoodsie cups or popsicles, jello and whipped cream

    juice boxes

    BTW I am fighting the whole food in the classroom for birthdays/holidays etc.. allowing for 1 a year(end of year coincidentally).

    I have been gluten free for just about a year and a half now. I am working this summer as a camp counselor and have to take some of my own food to supplement each week. I need some inexpensive, make-ahead, quick recipes. I will have access to a freezer and microwave. I would like to make as much as possible prior to camp so that I can enjoy the day I have off on the weekend. Any ideas would be greatly appreciated!! Thanks!

    I don't feel pasta freezes well, IMO it gets real mushy.

    Buy good freezer quart size bags.

    I would precook and lot of chicken and pork and separate into single serving portions. Same with rice dishes and potatoes.

    I make seasoned rice and beans they microwave well and toss in a meat and its a meal.

    If you like indian you can marinate and cook your chicken or lamb in Deep brand Tikka Masala or Curry paste it's very nice and mildly spicy.

    Use a gluten-free salad dressing like Honey mustard and precook your chicken in it .etc...

  14. Hormel is safe says gluten free on package

    Boars head are also safe

    Oscar Mayer is questionable they use a shared factory and cannot claim to be gluten-free

    Some generic/store brands say gluten-free on package ie Market basket is gluten-free

    Some people talk to the deli dept manager and ask for a sliced order to be done first thing in am after cleaning and before anything else is cut. I would not trust it but others have.

  15. I am getting tired of fruit being my only snack. Are there any cookies or mixes or anything that is gluten, soy, dairy and corn and nut free. Xanthan gum is from corn and guar gum makes me sick. I can't find anything without the gums in it. Any suggestions are appreciated!

    I don't know of any boxed mixes that are this limited but there is a website ... jazzyallergyrecipes blogspot .... they may have a recipe or 2 for you.
