    ARCHIVED Grrrr....

Dealing with insensitive people can be done.... you just have to train them! My coworkers used to offer me donuts, toast, and bagels all the time. I worked there for a year, and on my last day, they threw me a breakfast potluck.... of nothing but fruit! It was great. Cherries, watermelon, grapes, pineapple, all so yummy. I'm advocating celiac awareness, one...
  2. Man, I've been a wreck lately. I have a little bit of GI issues, but mostly I have lingering sadness, depression here and there, spaciness, and anxiety when facing tasks. Needless to say, it's hard to get things done. This seems to come and go. I think I'm gluten free, but I'm sure not acting like it. Stephanie--after reading your post, I'm going to try...

    ARCHIVED Gene Testing

Mariann, Thanks for the explination about the genes. After all the testing I did with this doctor, I got mad when she decided I "just have IBS." It's such a cop out. I guess I could get the testing done from Enterolabs, but at this point, my feeling is, "why bother?" I'd rather figure out the other the other stuff that could be wrong with me, instead...
  4. After writing my previous post, I talked with my mom (who has celiac disease), and she uses the FMLA with her job. She is only allowed two (2) excused absences per year in the industry she is in, so she uses the FMLA for protection from disciplinary action. I'm not sure if I will use it yet at my job--like I said, I've only been there two weeks, and that...
  5. I make egg muffins--they are really yummy, really fast, and a good way to use up extra veggies in the fridge. I got the recipe from someone else on the message board, and these are basically just scrambled eggs with extra goodies, and more convenient. I freeze a big batch, and then pop them in the microwave in the morning when my coffee is brewing. Here's...
  6. I am so grateful for this message board... it is so inspirational to know that I am not alone, and others have gone through this, too. I just started a new job two weeks ago, and it's a huge deal to me, the kind that could make or break my career. Well, today I home because of fatigue, the "big D", and overpowering naseau. All day I've been so worried...
  7. I love smelling my husband's food! After all, most of taste really isn't "taste" at all, it's your sense of smell that your brain translates to what you're eating. I read a medical study synopsis in a beauty magazine once that concluded smelling a food you are craving can diminish the intensity of those cravings. Because of that, I keep yummy-smelling...

    ARCHIVED Gene Testing

Just a note of caution-- Let your ultimate guide be what your body tells you, not what your doctor tells you. After a year of being a self-diagnosed celiac and living gluten free, I was still having problems, so I went to a highly respected GI doctor at the closest teaching hospital. She supposedly is THE celiac disease expert in the state. Well, the...
  9. How wierd! I have had this my whole life. Every 3 to 6 months or so, I would get a really sharp pain inside my rib cage (always the left side), and it would really hurt to breath in deeply. I would just take some time out, breath really shallow, and it eventually would go away after 15 minutes or so. I thought it was just more examples of my body making...
  10. I like using the mix from Gluten Free Pantry for basic white sandwhich bread. I sometimes toast it, but unlike most gluten free products, you don't have to toast it to make it edible. I just use my Kitchenaid mixer, which is fantastic. You can use it for anything. Some day I want to try making gluten-free pasta with it, but in the meanwhile, buying pre-made...
  11. Thanks, but I can't take too much credit for that--I haven't been glutenized in about a month and a half, so things are great! Talk to me after cross-contamination from eating at a restaraunt, and it's a whole other story! --Rachel
  12. Wow, I learn something new about celiac all the time. I am also a northern European mutt, but predominately Irish, German, English, and from the Isle of Man (in the British Isles). My healthy-as-a-horse husband is also of Irish descent. I was always hoping that when we eventually have kids some day, they would have more of his 'hearty midwestern stock' genes...
  13. Have you considered that maybe you have other food intolerances that are making you ill? Maybe it's not just the gluten. I have been gluten free (or as close to it as a newbie can be) for a year, but I keep getting sick. I thought I had no reaction to oats, but then my sensitivity increased and I learned I needed to eliminate oats from diet. By process...
  14. I've been lurking for a while and I figure this is as good a topic as any to introduce myself.... My family ate extremely healthy food when I was growing up, but everyone tells me I complained about stomach aches alot. Everything got worse when I went to college, but weight gain, headaches, anxiety, depression, a lowered immune system, and "food poisoning...
