  1. The Bobs Red Mill(the AP blend) says on the side that for best results you should add Xanthum Gum to the mix. I don't think it would affect the overall taste of the bean flours, but might help with the aesthetic aspect of your baking. Xanthum gum is a corn derivative i believe.
