ARCHIVED Testing/diagnosis Question
Marc49 replied to Marc49's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I never had ANY blood test for celiac disease. The gene test is done by rubbing a cotton swab against the lining of your cheek hard enough to take off cells for testing. They say to do it to the point that it might be uncomfortable, but not to bring blood. The gluten challenge seems the way to go I guess, as I have tried to keep track of different... -
ARCHIVED Testing/diagnosis Question

Your idea of french bread with olive oil and parm falls right up my alley,....I will do that just for you when I challenge myself! LOL My friends wife is in really bad shape,.....I guess she has to do something. I believe it is Mayo that is doing this. Personally,......I don't want ANY surgery unless it's a matter of life or death, thank you very... -
ARCHIVED Testing/diagnosis Question
Marc49 replied to Marc49's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I have been on Nexium 40mg once a day for several years. As you most likely know it is a PPI, and I don't have the acid reflux issues I had before. On the other hand, I can still have a feeling of something trying to regurgitate on me if I go to bed too soon after a meal, or if I happen to roll over onto my right side. I DO have a small hiatus hernia... -
ARCHIVED Bread Machine Question
Marc49 replied to Marc49's topic in Gluten-Free Recipes & Cooking Tips
I found that strange myself, and I'm not even a baker! Guess I will make my choice tomorrow as to following things exactly or not. Just finished running my mixer on different speeds for about 20 minutes to eliminate motor smells, and I hand washed the bowl and attachments. Does that pizza crust recipe you have use soy? If not I would love to have that... -
ARCHIVED Bread Machine Question
Marc49 replied to Marc49's topic in Gluten-Free Recipes & Cooking Tips
Well,.....I guess I wil try the whip then. Basically all I have to do is drop the mix into the bowl with the enclosed yeast packet. You then put 1/4 cup of oil, and I think 2 eggs, and add warm water up to the 2 cup mark. Mix it for whatever time and pour it into an 8X4 greased pan. I am going from memory here! LOL You don't even let it rise,... -
ARCHIVED Testing/diagnosis Question
Marc49 posted a topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
It was suggested by Sylvia,....one of the mods, to post this question over here, so here goes. First a bit of history: It all started when my 'regular' doctor who is an Internist, but also practices 'functional medicine' did a 4X/day saliva test on me. He was actually tracking my cortisol levels, but some aspect of the test that can indicate gluten intolerance... -
ARCHIVED Bread Machine Question
Marc49 replied to Marc49's topic in Gluten-Free Recipes & Cooking Tips
Sylvia,.....not baking yet, but the mixer seems fine this time. I'll probably try that mix tomorrow, and I'm glad to know that canola oil is fine to use. I read the directions for the Pamela's bread mix and saw something I found a little strange. It says to use the whip attachment on the stand mixer instead of the paddle,......is that what I should really... -

Just Pamela's Products plain bread mix. All it says is 'oil.' Don't forget to C&P that recipe when you get the chance! -
ARCHIVED Bread Machine Question
Marc49 replied to Marc49's topic in Gluten-Free Recipes & Cooking Tips
Yes,.....I wasn't expecting it until next week actually. Here is another incredibly stupid question for you baker types.LOL That Pamela's mix I have calls for 1/4 cup of oil. I assume it is plain vegetable oil? Since I have not been a baker, all I use for my 'other' cooking is olive oil, or canola oil. I doubt they intend for you to use either of... -
ARCHIVED Bread Machine Question
Marc49 replied to Marc49's topic in Gluten-Free Recipes & Cooking Tips
Send some of that fall weather down here,.......I'm ready for summer to be over! LOL Is there anyway you could post that recipe for the bread you just made? I got my new replacement mixer a few minutes ago,......hope nothing is wrong with this one! All I have right now to try first is a bag of that Pamela's Products mix. Who would have thought my... -
Sylvia,.....I didn't mean for this thread to turn into what it has BTW. I see in your 'sig-line' that you have CONCLUSIVE proof of the disease. Obviously you are doing the correct thing, and will need to do that for the rest of your life. You can surely understand my confusion though? Being told two different things by two different doctors, with...

Yes,....I have done that many times, and I agree they are great! The concoction I listed is something I do when I don't want to fire up the grill, and I really only started doing it more often after not being able to eat the old buns I used to eat them on. I still have no issue eating a brat done like you mentioned on a plate with no bun. I love brats...

Then I guess steaming would not be a good choice to try?

ARCHIVED Bread Machine Question
Marc49 replied to Marc49's topic in Gluten-Free Recipes & Cooking Tips
I agree Sylvia,.....the more of us out here experimenting, the better chance of someone hitting on something edible one of these days! -
Thanks once again for all of the help folks! I just didn't want Ginsou to feel attacked because of what they had said to me about cheating once in awhile. I wanted to also make clear that I have no concrete proof that I even need to be doing this, as all I know for sure is I carry the gene. My GI doc says a lot of people that carry the gene never have an...

ARCHIVED Bread Machine Question
Marc49 replied to Marc49's topic in Gluten-Free Recipes & Cooking Tips
Simona,.....when you finally hit the right mix, be sure to let us all know about it. What is different about Russian bread? I'm curious because my departed step-father was from Russian descent. -
Open Original Shared Link The American Bison, what most people incorrectly call buffalo. Buffalo are actually a different breed found in Africa and Asia for instance.
-
Yes I have actually,....one mistake since the beginning of the year isn't bad. I looked at your 'sig'line and quickly understood even more that my issue is not that big of a deal. How in the world do you eat with all of those food intolerances? I can't imagine what a struggle it must be to find products that meet your needs. My mother was...

ARCHIVED Bread Machine Question
Marc49 replied to Marc49's topic in Gluten-Free Recipes & Cooking Tips
Figured I would reply without doing a C&P of Ginsou's post. Believe me,......as soon as I get the new one and try a couple of things I will give an opinion. I wouldn't be too excited about my results, as you folks have been doing this for a long time, and I have virtually never baked a thing in my life! I doubt I am going to discover a miracle,.... -
I've never heard of Bertille Buns,....I assume they are a pre-made packaged product? If so, I have never seen them around here. We only recently got the Udi's burger and hot dog buns. We've had the Udi's bread since I started this, but I just can't eat the stuff. The only thing I made on it that was edible was a grilled cheese sandwich. Now please...
-
Come on folks,....I'm looking for bun recipes, not to have a thread chastising another member.
-
I see there is another Bison fan here! Bought some of those Udi's buns that I read were 'really great.' I think they are barely edible to be honest, so after I finished the package I didn't get more. I'm sure I could 'cheat' from time to time, as I am not as sensitive as some folks here are. I actually ate something last week that I thought was...

On another thread I was convinced to get a Kitchenaid mixer. It came the other day, but had an issue with the switch, so I will be getting a new one within the week. The thing that I would most like to find a successful recipe for is hamburger buns. I have a bun pan on order also that I believe is either 4" or 4 1/4" molds. I would appreciate it...

ARCHIVED Bread Machine Question
Marc49 replied to Marc49's topic in Gluten-Free Recipes & Cooking Tips
I'm totally satisfied with customer service's response. At first I was afraid they were going to tell me to take it to an authorized service center, or that I would have to pay return shipping. The rep was very nice and insisted that I get a new one to be safe. I think some flakes of styrofoam got into the switch mechanism myself. Still safer to send... -
ARCHIVED Bread Machine Question
Marc49 replied to Marc49's topic in Gluten-Free Recipes & Cooking Tips
Sylvia,......wrong on no problems! LOL I unpacked it all and it looked OK minus some dents in the box. No 'physical' damage per se, but when I plugged it in and put it on 'stir' nothing happened. I tapped the switch and it started. Thought something might have been in the contacts since I am a 'mechanical' type of guy. It ran fine for awhile,...
