  1. I had an awesome cooking week this week, so I have to post! I made pulled pork from scratch in the crock pot and have been eating it for 3 days straight! On the weekend, I made sushi from scratch (using some fake lobster I found to replace fake crab... the only ingredients difference being the lack of added wheat starch ), then on Monday, I used the leftover...
  2. For me, its been almost exactly a year since going gluten-free. The first 6 months were the worst. I kept on getting glutened from eating out in the past year, which made me feel like I was starting fresh on the diet each time that happened. Right now, I am eating out as little as possible (which I know is hard for some people), and trying to eat mostly...
  3. I've been less vigilant on my diet the past 2-3 months and I've definately been in the same boat. The amount of over-sleeping I do seems to relate to how much gluten I ingest. Right before my diagnosis, I ate a handfull of crackers, and I was so tired I couldn't get out of bed for 2 days! Now I'm in the same boat again for not checking ingredients. I...

I couldn't even swallow bread/crackers/etc. without heartburn/nausea and so I went gluten free anyways. Turns out one...
  5. Oh wow, thanks ecf. Its pretty reassuring to know where these symptoms might come from. I got the impression from my doctor that if wasn't celiac disease then I have nothing that they could help me with/was medically recognized. Luckily I haven't had too many cc problems so far.
  6. Shauna, thanks for your post, it really helps a lot! I guess only time will tell to see if I have to go the de-contamination route.
  7. I've only been gluten-free for 2 months, and I'm really trying to guage my sensitivity. My bloodwork came back negative, and I was told by my doctor that I'm not celiac, and that the gluten-free diet is working fine so assume I'm just intolerant. On Tuesday, I took my boyfriend out to dinner for his birthday, and my "gluten-free"-salad came with croutons...
