My parents and I are taking a trip there in August to visit my twin sister (who's currently teaching English over there).   2. I would second Easy Gluten Free Baking by Elizabeth Barbone - her stuff is wonderful! She also has a website, glutenfreebaking.com, where she has a lot of free recipes. I also have Gluten-Free Baking Classics, which seems really good, but I haven't had much of a chance to try it out yet.
