  1. Newbie here too! My mistakes have been (in chronological order) Rice Krispies (malt!), Fried Green Tomatoes (breading--DUH!), Modified Food Starch (tricky). The learning curve is steep--but I'm getting there. Reading a little bit every night to educate myself. Conclusion? Gluten is in about 95% of processed foods.

And since here in the States we don't have anything like that, I decided to forgo testing because once I got off gluten, I couldn't see any reason to do testing that would require me to eat food that's basically toxic to me just to come up with a life-long prescription to do what I've already decided to do! If there were tax breaks or insurance...
  3. I'll second the food journaling suggestion. After much foot-dragging, I finally bit the bullet and did it--it's the only thing that's helped me pinpoint my food intolerances; including the gluten thing.
  4. Weird. Chocolate bothers me too and not sure why. Let us know if you figure anything out.
  5. Found it!! (The LaraBar recipe) Open Original Shared Link Tried 2 other recipe versions and found I like this one best. I added some semisweet chocolate chips (slightly melted in the microwave first) and some unsweetened coconut flakes. Yummy! Oh and be sure you use whole dates in your food processor. The prechopped ones aren't necessarily gluten...
  6. YES!! found a great recipe and it's infinitely modifiable. Lemme see if I can rustle it up, I remember putting it someplace "safe."
  7. 3 weeks in and down 7 pounds without even trying. My appetite has stabilized; before going gluten-free I always felt this weird mix of bloating/nausea/hunger all the time. I still need to lose a few pounds too--so I'm happy about the weight loss. =)
  8. Brand-new here too. I discovered that along with gluten, I was also intolerant to soy (at least for the time being anyway). I'd definitely double-check for the gluten, but keep in mind there may be another intolerance or two that's bugging you. Hope your tummy gets happy as quickly as possible!
  9. Ok--will definitely do the separate toaster thing! And the spaghetti thing was just a dumb-blonde moment, it's amazing what you can do on autopilot and multitasking! (Oh and tummy really unhappy now. Took some activated charcoal as soon as I realized what I'd done, but it doesn't seem to be mitigating my reaction.) Lesson Learned!! Anybody have any...
  10. I was thinking about this the other day. I'm a Seventh-day Adventist and we usually have communion 4 times a year. I think I'll let my pastor know (small church) and see if I can just bring my own and see if he'll "prayer" it in when they bless the emblems (what we call the bread and grape juice). I usually sit near the front so my cracker should be close...
  11. Great ideas and I totally need some right now. Just made some regular spaghetti for the kids for dinner (first time since I went gluten-free) and whoops--had bitten and swallowed a tiny little piece (how I use to test for al dente. *&^%! I can already feel my tummy rebelling. Going to have to come up with some better ideas? Hadn't thought about...
  12. YES! Started thinning 8 years ago after the birth of my daughter. Fortunately it was pretty thick to begin with, but I could tell a big difference. Hoping that some of it will come back now that I'm gluten-free.
  13. Only on gluten-free week 3 here so I'm soaking up the good info in this thread (and on the rest of the forum) too. All I can say is that I'm feeling so much better that I don't care how restricted/difficult this diet may be; I can't imagine ever eating gluten again on purpose! I could happily live on applesauce, Larabars, and almonds if that's what it took...
