  1. Hi everyone! I am half indian, and used to LOVE making semolina halva with cream of wheat, which ofcourse, Im not making now. I have been eating the Rice and shine by arrowhead mills, but havent tried frying it in butter or anything yet, and tomorrow I plan to get some cream of buckwheat or quinoa flakes. Out of these 3, which one tastes the most like cream...
  2. Its just so scary to me! I guess because I have always loved food, and actually, I am ashamed to admit, have depended on food to make me feel better when I felt bad from my other health problems! I havent had chocolate in months, and it seems like everytime I try to eat sugar (including honey and maple syrup) I get a pounding headache that lasts for days...
  3. I have noticed that alot of you have developed food allergies and intolerances since being diagnosed with celiac. Do these go hand in hand, or is it just coincidental?   4. Hi..yes I have been buying organic EVERYTHING, just to be on the safe side..even then, as you said, I cant get certain fruits and veggies because they are high in natural sulfur. Grapes are actually sprayed with sulfites, because of the wine process. As far as the tapioca and corn starch..when corn is milled, it is sulfited..and so all processed corn is out...
  5. Oh, and one more question too, can I make a pie crust with it? You know, just the old fashioned simple recipe of flour, salt, and ice water? I really cant use any starches because of sulfites, and I cant do the potato flour or anything because potatoes are high in sulfur and they cause me to react...the xanthan gum I think is a corn issue (which is sulfited...
  6. I can live with that! I like tortillas..I was actually making them just about everynight with my whole wheat flour and all purpose flour. I just mixed them with some salt and water and cooked it in a pan. So you think I could mix the brown rice flour with rice and salt and do the same thing. Oh, and could I use it as a thickener, like to thicken soups or...
  7. Hi! I went out today and bought a small bag of brown rice flour. I have no idea what to do with it. I have to avoid alot of the other flours because of another allergy I have, so is there ANYTHING I can do with the brown rice flour by itself? Can I make a crust with it? Can I sub it for all purpose flour? I need some help and ideas. Thanks! Sabrina

I think I already know that I feel a whole lot better not eating gluten, but wanted a positive answer, atleast for my kids sake, so I would know whether or not to put them on gluten free. I get ill after having my first child...then found out I had gallstones, so I had my surgery scheduled to have my gallbladder taken out and found out I was pregnant AGAIN and waited it out until after I had my baby. Well, after the surgery, (I also had to have a d&C the same day because of retained birth...
  10. I wanted to say that its a good time to maybe find passover margarine that is free of dairy/soy/ and corn!!! There is Mothers margarine, kosher for passover, and Migdal kosher for passover. My son is allergic to all 3, so I really look foward to passover so that these products are available.
  11. OK, I understand now. I guess I am going to keep on with the dairy unless I notice a problem. Ianm- do you totally avoid sulfites that are listed, or do you avoid even the amounts that arent put on labels? They only have to list them if they are 10 parts per million. I even react to high levels of natural sulfur, so right now I cant even eat onions, eggs...
  12. Good. I am going to get some of the puffed rice tomorrow that they make. Someone told me they eat it with butter and salt as a snack. YUM. Corn is heavily sulfited when it is milled, so I cant eat popcorn, so that would be a good alternative for me! Sabrina

  16. I am awaiting test results that I called and had my doctor call in for me. Before hand, I didnt know you were supposed to eat alot of gluten so that the test would have a better chance of being accurate. I did eat homemade flat bread using whole wheat flour a few times that week, and the night before the test I ate some cookies made with flour and oats..but...

  18. Is it neccessary for me to call the company of the papertowels I use to find out if they are gluten-free, or do papertowels even have gluten at all? Thanks. I feel stupid asking but you never know what they put in stuff anymore! Sabrina
  19. Alot of recipes that I collected for my son last year have buckwheat in place of oat in things like homemade granola, cookies, etc...thats an option too I guess. Sabrina
  20. Hi! I have been researching the different alternatives for a gluten-free diet. I have read contradicting things about quinoa, buckwheat, amaranth, etc... Can anyone use these flours/flakes without a problems, or has anyone actually experienced a problem with them??   21. I was thinking of trying the arrowhead mills rice and shine cerea. I am a little reluctant because even though the ingredients only say brown rice grits..the front says "made with gluten free ingredients". When I further read the description at the website, it says gluten free. Im confused. Is it actually gluten free? Are they possibly marking it that way...

  24. Well, I have noticed since I have had to stop eating any processed foods because of the sulfite thing, that My husband has been wanting to sample my food.. I have very limited things I can eat right now, but he always wants to taste my "creations". Im thinking I may be able to get him to like the same things I eat, ofcourse, I cant expect him to go COMPLETELY...
