  1. Thank you both for the posts, I can't wait to try the mixes as well as to create my own! I guess I need to order a few more things lol. Never thought I would need more than just a couple ingredients :)This is definitely a learning experience, but well worth it!
  2. Hi, So I have a leaky gut and cannot tolerate many foods right now. I can't eat gluten (of course ), eggs, corn, or rice. So I would like to come up with a good gluten free flour from quinoa, arrowroot starch, amaranth and garbanzo/fava bean flour. I can also tolerate almonds, millet, and sorghum, but the other flours are easier to access right now....
  3. Quaker Rice Cakes are great and they say gluten free on them. I haven't had any problems with them. But I have only tried the lightly salted. They are also very easy on my tummy which is great because my main reaction to gluten is horrible tummy pain and nausea. Eggs and corn elicit the same reaction so far, just not quite as bad. Rice, potatoes, and quinoa...
  4. I suffer from horrible fatigue due to iron defficient anemia have you had any vitamin or mineral levels checked?
  5. No thanks, there is a reason we shouldn't eat gluten. No vaccine will be able to change that. Besides who knows what it's side effects will be.
  6. Yolo, thank you very much for the advice. I have iron deficiency anemia. As I read everyone's response I realize that I am going to need to find a doctor that specializes in gluten conditions. My gastro in anchorage told me "I'm glad your feeling better continue the diet and here is a prescription for IBS if you need it. Call me if your symptoms return...
  7. I have read many articles and such that say that anemia is a classic sign of celiac, but I tested negative a few years ago. Can you be gluten intolerant and have anemia as well or is anemia specific to celiac? I am definetely one of the two. I have been gluten free for a month and the only symptoms I cannot resolve is my brain fog, off balance at times, and...
  8. Thank you so much, I had planned on starting to eat less processed items, looks like it will happen sooner rather than later!
  9. So Ive been gluten free for almost a month, while I no longer am experiencing my severe stomach problems I have still been experiences really bad brain fog. I often eat Kellogg's fruit snacks as a snack thinking that they were safe. Today I experimented and found that within 20 minutes of eating them the brain fog set in. So I went on their website and found...
  10. I am more sensitive as well. 1 1/2 weeks I was gluten free and accidentally ate tacos where the seasoning had wheat in it and I was sick for two days.
  11. I had trouble with my weight due to my symptoms while eating gluten and finally found it to be my problem. To help slow down my weight loss I drank ensure plus which is 350 calories every night when my symptoms were the worst. My latest gastro gave me a sample of Scandishake and I drink that with vanilla almon milk and it gives me 540 calories per 8 oz. I...
  12. I also tested negative and had a lot of the same symptoms you have, especially the pain in my side after many misdiagnosis' a gall bladder removal that did not help at all I finally did a gluten free diet on my own. Even my newest gastro said oh its IBS here's a laxative. I said no. The diet has made a world of difference it's so great. While I have a long...
  13. I had this problem with my husband, but it was with his diabetes. He was diagnosed at 19 and was not happy.HeI had all the proof right in front of him, but just couldn't except the diagnosis. It was really hard for him to change his diet as well. Unfortunately it took years of harping on him and reminding him of the damage he was causing to his body as well...
  14. Thank you for everyone's help. It really helps to be able to talk to other people that are going through the same thing. I don't know anyone that has an issue with gluten or at least that has identified it so this is a whole new world for me. Best wishes to all!
  15. Thank you so much for your insight it has answered so many questions of mine. We have not tested our daughter's milk allergy because her last doctor said that she was too young to test, but she has a new pedi that she will see in september so maybe they will help us out. When she was one we weened her from the bottle on to regular milk and I noticed she had...
