ARCHIVED Vegetarian Meal Ideas
MerrillC1977 replied to alex11602's topic in Gluten-Free Recipes & Cooking Tips
I have a couple of vegetarian dishes that I'd love to share -- and they are fantastic! I am not sure if I am allowed to put links to outside websites, so I will just say that neither of these are my own recipes (I would link you to where I found them if it was allowed...I found them online or borrowed them from friends.) I'll put them in two separate... -
ARCHIVED Perfect Gluten-Free White/sandwich Bread
MerrillC1977 replied to MerrillC1977's topic in Gluten-Free Recipes & Cooking Tips
It was a metal loaf pan, but gosh, I am not sure of the exact size....maybe about 8" x 4" or 9" x 5". It's the regular loaf pan that you get when you buy a set of Wilton oven pans. Like this: -
ARCHIVED Celiac V. Gluten Intolerance
MerrillC1977 replied to MerrillC1977's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
What if someone *can* eat a slice of bread, or a piece of pizza, or a half-cup of pasta and not feel any symptoms....yet having removed gluten from their diet made one of their main symptoms (constant minor intestinal pain) disappear? This is the case. What do you make of that? -

Well, I didn't check what the shipping prices would be. It was just a suggestion. Sorry. -

ARCHIVED Does This Look Like Dermatitis Herpetiformis To You?
MerrillC1977 replied to MerrillC1977's topic in Dermatitis Herpetiformis
Question -- I went gluten-free 10 days before my skin biopsy and blood work...Gluten-free Sept. 12, testing and biopsy done today Sept. 21. But I *did* eat gluten once or twice during that time (some cake a couple nights ago, a submarine sandwich over this weekend, and maybe one or two bites of other things previus to that). Is this a long enough stretch... -

ARCHIVED Does Eating Gluten Make All Celiacs Sick?
MerrillC1977 replied to alexsami's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Thank you, Bubba's Mom and love2travel, for those answers. Here's another question -- once going OFF gluten, do the previously damaged villi recover? -
ARCHIVED Does Eating Gluten Make All Celiacs Sick?
MerrillC1977 replied to alexsami's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
So, if a person is actually diagnosed with Celiac, but never had any intestinal symptoms....can that person assume that as long as they don't ahve intestinal symptoms, that their intestines are not being damaged (i.e. they are not on the way to intestinal cancer unless/until they have intestinal symptoms)? Can a diagnosed Celiac person who never gets intestinal... -
ARCHIVED Perfect Gluten-Free White/sandwich Bread

Still great! The positive comments I received from co-workers that I mentioned in my post were on the bread's second day. -
ARCHIVED Perfect Gluten-Free White/sandwich Bread
MerrillC1977 posted a topic in Gluten-Free Recipes & Cooking Tips
I did it! Through a little mixing and matching of various found recipes that I tried this past week, I have come up with what I consider to be the perfect basic gluten-free bread. It's a standard white loaf, and can be added to with nuts, seeds, spices, extracts, other grains, etc. to make it into different flavors and varieties. This bread is good!... -
ARCHIVED Does This Look Like Dermatitis Herpetiformis To You?
MerrillC1977 replied to MerrillC1977's topic in Dermatitis Herpetiformis
Well, I just got back from the dermatologist's office; I saw a Nurse Practitioner. She was really nice and good. I have 4 dissolvable stitches on my side, from 2 little biopsies (one lesion site, and one lesion-adjacent site). Plus blood work. She didn’t balk at the idea of my rash possibly being Dermatitis Herpetiformis like a lot of doctors might, ... -
ARCHIVED Not Yet Diagnosed But Gp 99% Sure I Have Dh & Coeliac
MerrillC1977 replied to fairydust81's topic in Dermatitis Herpetiformis
I don't know if what you have is DH...but WOW -- those pictures could be of *my* arms! It looks exactly like mine. I am still trying to figure out if I, too, have DH...so please do let me/us know what your doctor/biopsies find out. Many thanks!! -

I really hope so. If I have time, I will try it tonight. If not, tomorrow. And of course I will update with results. -
ARCHIVED Does This Look Like Dermatitis Herpetiformis To You?
MerrillC1977 replied to MerrillC1977's topic in Dermatitis Herpetiformis
Thank you. I am already going gluten-free, yes. But, how do I go iodine free? Where is iodine found in foods? And, call me crazy, but since I've gone gluten-free, I really do think that the rash acts up again and gets itchier on the day of/day after I eat a little bit of gluten. This third bout of the rash showed up about a week and a half ago (on... -
ARCHIVED Does This Look Like Dermatitis Herpetiformis To You?
MerrillC1977 posted a topic in Dermatitis Herpetiformis
I have gotten a rash a few times now over the past couple of years. The first time I went to the doctor about it (primary care physician), he thought it was scabies, and prescribed Permethrin Cream. The cream "seemed" to work, but the rash recurred....many months after the first time the rash appeared, and I used the leftover cream again. I now have the... -
ARCHIVED Trying To Perfect A Bread Recipe

That's interesting about the Xanthan Gum. My understanding is that bread would be crumbly *without* it. I'll give it a try both ways. -
ARCHIVED Warn Status
MerrillC1977 replied to BobbyKat LittleCub's topic in Board/Forum Technical Help
I received a warning that stated "Please re-read our board's rules before posting again...re: [insert first few lines of my deleted post]." When I asked what I did wrong, the response I received stated only "The post is deleted...please read: Board Rules." I had to ask again for more clarification, and only then received an email back with a direct... -
ARCHIVED Trying To Perfect A Bread Recipe
MerrillC1977 replied to MerrillC1977's topic in Gluten-Free Recipes & Cooking Tips
Thank you for your advice, and for confirming my suspicions about the bean flour. Maybe I will take a taste of the BRM flour uncooked and see if it tastes similar to what I wasn't liking in the finished product. I do realy like the King Arthur mix -- it's not terribly expensive, has a mild if non-existent taste, and looks and feels just like "real" flour... -
ARCHIVED Warn Status

The stuff that I feel is harsh and unfair is how the moderator dealing with me is handling the situation/conversation privately. But I am not going to call anyone out here or blast anyone; that wouldn't be nice or right. I also didn't know, because the mod never said, that there are no real repercussions. I just hate having marks on my record. Lol. Thank... -
ARCHIVED Warn Status
MerrillC1977 replied to BobbyKat LittleCub's topic in Board/Forum Technical Help
Does warn status ever get reduced? How, when? Like I mean, after a certain stretch of time without any further infractions, you go back to zero? Or are we flagged forever and can never improve our standing around here? (I too was warned, being new and not having intended to break *any* rules -- and I feel that I am being treated very harshly and unfairly... -
ARCHIVED Trying To Perfect A Bread Recipe
MerrillC1977 posted a topic in Gluten-Free Recipes & Cooking Tips
I have been experimenting with different bread recipes lately. So far I have made three different loaves, with three different recipes. One was a total failure (which I posted about in another thread topic), so I won't even mention that one here....but the other two were quite good. I apologize in advance that this post will be lengthy, because I am going...
