  1. What kind of flour do you use to make your gnocchi? My family's recipe is potatoes + flour.....but what kind of gluten-free flour would I use?

  4. It was a metal loaf pan, but gosh, I am not sure of the exact size....maybe about 8" x 4" or 9" x 5". It's the regular loaf pan that you get when you buy a set of Wilton oven pans. Like this:
  5. What if someone *can* eat a slice of bread, or a piece of pizza, or a half-cup of pasta and not feel any symptoms....yet having removed gluten from their diet made one of their main symptoms (constant minor intestinal pain) disappear? This is the case. What do you make of that?

So, if a person is actually diagnosed with Celiac, but never had any intestinal symptoms....can that person assume that as long as they don't ahve intestinal symptoms, that their intestines are not being damaged (i.e. they are not on the way to intestinal cancer unless/until they have intestinal symptoms)? Can a diagnosed Celiac person who never gets intestinal...

  13. I did it! Through a little mixing and matching of various found recipes that I tried this past week, I have come up with what I consider to be the perfect basic gluten-free bread. It's a standard white loaf, and can be added to with nuts, seeds, spices, extracts, other grains, etc. to make it into different flavors and varieties. This bread is good!...

I have 4 dissolvable stitches on my side, from 2 little biopsies (one lesion site, and one lesion-adjacent site). Plus blood work.   21. Thank you for your advice, and for confirming my suspicions about the bean flour. Maybe I will take a taste of the BRM flour uncooked and see if it tastes similar to what I wasn't liking in the finished product. I do realy like the King Arthur mix -- it's not terribly expensive, has a mild if non-existent taste, and looks and feels just like "real" flour...
