  1. Wow. I am a dietitian and can barely understand all those restrictions. (FYI- there is a big difference between dietitians and "nutritionists"). I really question her credibility given that she recommended wheat, barley, and oat grass to a celiac???   2. It can actually take up to 12 months for this lab to normalize- and even then it's not a perfect indicator of gluten intake as other things can affect it as well.   3. Holy cow- you pretty much have all the exact symptoms I do. I had my gallbladder out last year but have off/on had pretty much exactly those symptoms. It actually makes a little sense that you are nauseated at night, since your stomach doesn't empty well- by the end of the day it may be filling up and leading to the nausea (many people vomit with gastroparesis also). Do they have you on Reglan? That is a common medication for this, that is a prokinetic agent- meaning it helps your stomach move/contract...

I had lost weight years ago (probably when I first developed celiac, although I just got diagnosed last summer) but was then stuck at a very thin weight and couldn't gain a pound to save my life.
