  1. I just made some cookies from scratch, used the Tollhouse recipe and the gluten free flour mixture I bought from a local Amish Store. Taste great but the cookies do not "rise" at all and simply melt flat while in the oven. Any ideas on what I could add to give it some form?
  2. I miss the simplicity. I used to make many recipes using things like prepackaged cresent rolls etc. It's just harder now to make the same things. And of course going to parties or restraunts has many challenges.

  5. Just made the recipe. It tastes really good, although the bisquick is kind of non existant in it. I thought it would be more like the impossibly easy cheeseburger pie. Still tastes very good, just not as much "bread" type substance to it.
  6. I have been putting them in the microwave for about 30 seconds and boom, warm soft bread!
  7. I love a good reuben sandwich and have been craving one but did not know what to do since I've gone gluten-free. I purchased the gluten-free bisquick from Betty Crocker and I found this recipe on their website. 2 cups Original Bisquick
  8. I bought some Udi's bread and had a sandwich today. I warmed up the bread for about 10 seconds in the microwave before I made it which made the bread soft. Only odd thing to me is the size of the slice of bread. Is it made for little kids??!!!
  9. Thanks for the replies. I think my main mission here is going to be planning. If I can plan my entire week of food I believe it will be a lot easier to keep with the diet, otherwise I always find myself in the "there's nothing to eat" mindset. One hard thing for me is I work on the road everynight and planning what I can bring in a cooler usually is difficult...
  10. Well I have had stomach issues all my life (started with GERD as an infant). About 2 years ago my doctor determined I have celiac. I have been doing a gluten free diet, most of the time, but would always eat normal for a day or two on the weekends (and yes I would suffer from it).
