  1. Thanks everyone. I made the pie on Sunday and it was a big hit (it was a big pie and it was polished off last night - it lasted less than 24 hours). By the way, it was evaporated milk and not sweetened condensed milk so I made an equal sub for vanilla almond milk. She loved it!
  2. After my daughter was having some stomach pain after being on the gluten-free diet for six months, we started looking everywhere for hidden sources of gluten. We found that the hamster food had wheat listed high up in the ingredient list. Her hamsters are on her desk that she draws, colors, and eats snacks at. So after doing some research, I could not...
  3. Thanks Sylvia - just ordered the ebook. Hubby just told me we are hosting Thanksgiving for his side of the family at our house
  4. Thanks for the suggestions. I think I will try it with the vanilla almond milk. She drinks plain almond milk every day so I can give her what is not used in the pie. Do you think an equal substitution or less since almond milk is not as thick as sweetened condensed milk?
  5. I will add gluten free pizza. My daughter's fav. I get the premade Udi's pizza crusts (2 smallish ones to a package and keep in freezer - they thaw really quickly). I add gluten free speghetti sauce, gluten free pepperoni, and kraft pizza cheese (lactose free). She loves it. I usually make one a week and she has some for her lunch the next day. I...
  6. My daughter has been gluten free for over 6 months. She is doing great and adjusting to her new diet. She loves it when I make one of her favorites dishes in a gluten free version. She is requesting pumpkin pie. I found a gluten free pie crust mix and gluten free pumpkin pie filling but the recipe I have calls for sweetened condensed milk. She also has...
  7. Thanks Takala and Gottaski. I have to admit, I was surprised that he even suggested it after my going over all the issues that have resolved after going gluten free.
  8. Thanks Mushroom. That is exactly how I feel. I just wanted confirmation that I was not being crazy for refusing to put my daughter through that. I cannot stand the thought of going back to how she used to feel. My main goal is to have documentation when needed for school. With or without the scope, I believe the GI doctor will work with us on that...
  9. According to celiac blood test (not complete panel) 4 years ago and negative endoscopy biopsy results last September, my daughter does not have celiac disease. After being in pain for years and having "unexplained" failure to thrive, growth hormone deficiency, pancreatic insufficiency, chronic gastritis, mouth ulcers, constipation, etc., we put her on a...
  10. Thank you both for your comments. It is hard, for me, to understand the way gluten could cause so many health issues for her and to be without a "medical" diagnosis. She is in a small school and they have been fantastic with working with us. This school only goes to sixth grade and I do wonder what we will do when she goes to a larger school. I feel like...
  11. My daughter, adopted from China, is DQ7 and DQ9. She has a host of digestive and growth issues (see my signature) and has been through extensive medical testing for everything from cystic fibrosis, H. Pylori, celiac disease, etc. Her celiac blood panel (not full) was negative 3 years ago and her endoscopy came back negative last Fall. Her pediatric...
  12. My daughter has a sleep over tonight. I checked with the Mom and they are having pizza and doughnuts (her daughter did not want birthday cake) so I made a gluten free pizza last night and pulled a gluten free doughnut out of the freezer and will send them with my daughter. I will also send lots of snacks and gluten free cereal bar for the morning (they...
  13. My daughter has come off another medication - Hooray!!! She was on Creon for pancreatic insufficiency. Other than her growth hormone injections, we are down to one daily medication (from 5) for her chronic gastritis. What is the typical healing time for Chronic Gastritis? She has been gluten free since the end of March. Would love for her to be medication...
  14. Hey CeliacMom, My daughter has seen Dr. Dimmit in the past. Out of frustration, I went to another Ped GI closer to home (Huntsville, AL). Also very frustrating experience with the Huntsville Ped GI. Do you know if Dr. Dimmit is the "expert" in the Alabama? Would love to swap a few doctor stories with you. Can you message me? Hope your son is feeling...
  15. Sorry, she has been gluten free since March 15th.
  16. My 8 year old daughter had a negative blood test (not full panel) for celiac disease several years ago and her biopsy (last year) was also negative. She was positive for gluten sensitivity by Enterolab and has been gluten free since April 15th of this year. Her symptoms: Idiopathic growth hormone deficiency, failure to thrive, pancreatic insufficiency...
  17. My celiac negative daughter has been on a gluten-free diet for 6 weeks. She is doing phenomenal. Stomachaches are nonexistent, no more constipation, less gas, her bad breath is even gone. She is happier than I have seen her in 2 years - YEAH!!!! Her endocrinologist that she sees for growth hormone deficiency was really excited about the Enterolab test...
  18. She is feeling bad this morning. Stomach pain, some overreaction (behavior), and gas. We have all learned our lesson So we are all more committed to the gluten-free and lactose free diet now. Since we are dealing with gluten sensitivity that has only been diagnosed via enterolab, this experiment gives us more confidence that we are on the right...
  19. If I recall correctly, lactaid milk and lactose free ice cream are not really lactose free but rather have lactaid added. Our daughter could not tolerate it very well. We switched to soy milk but later found soy sensitivity so now have her on almond milk. She also does not do well with yogurt so we give the soy yogurt sparingly. The Kraft cheeses usually...
  20. She has had no ill effects so far. She did take a creon with her pizza and a lactaid with her ice cream. I told her this morning that if you play with fire you may not get burned the first time but if you keep playing with it eventually you will get hurt. I know there my still be a reaction coming but so far so good. Kristy
  21. Skylark is right. She does not have Celiac disease. If that were the case, I would not let her have pizza. We believe she has a sensitivity to gluten based upon positive response to gluten-free diet and her Enterolab results. While I am hoping she does not have too bad of a reaction, she will be offered food/snacks when I am not around and will have...
  22. My eight year old daughter has been gluten free since March 18. It has been an adjustment for us all but she feels so much better. Her mood has changed. She is not in constant pain anymore. She is happy again. Today is reward day at her school. Her class is having a pizza party and ice cream sundaes. I told her that I would be happy to send some...
  23. The article I had planned to take is: Sapone et al.: Spectrum of gluten-related disorders: consensus on new nomenclature and classification. BMC Medicine 2012 10:13. Abstract A decade ago celiac disease was considered extremely rare outside Europe and, therefore, was almost completely ignored by health care professionals. In only 10 years, key milestones...
  24. The test results were stool test for gluten sensitivity from Enterolab. Her blood work and biopsy for celiac disease were negative. She has been gluten free for 3.5 weeks so I am not planning to put her back on gluten for further testing. I am asking if I should try to talk to him about gluten sensitivity or just move on.
  25. My eight year old has been gluten free for 3.5 weeks. She feels better than she has in a very long time. No stomach aches and she is happy again. She has not been diagnosed with Celiac Disease (blood test and biopsy negative) but through Enterolab lab we got the following results last month: Fecal Anti-gliadin IgA 163 Units (Normal Range is...
