  1. In my experience the gluten-free pizza from a pizza making restaurant doesn't work because everything around it is coated in wheat flour; the ovens, the paddles used to put in and take out of the oven, even in the air. Your experience may be true for me, too, though. Maybe the reaction is lasting longer. Great.
  2. Good points. I use almond butter, they eat cream cheese. Instead of using butter I use coconut oil to avoid cc. I just don't eat jelly anymore. The colanders might be a culprit here. Or I guess my reaction may be less intense but lasting for a longer time. I guess it's typical for reactions to change over time, huh?
  3. Hi Evabee and welcome! I've been making a few things with coconut and coconut oil, coconut milk, coconut cream, all as a dairy alternative. In some things a slight coconut flavor shines through. Not enough to be a turnoff. And I'm not one to usually like the flavor. Like, you know those candy bars that have coconut in them? Always a thumbs down for...
  4. Hi friends, I learned last May that i was gluten intolerant and spent the summer discovering hidden gluten and having a hard time while traveling. Once home I was able to have greater control over my diet and I hadn't been sick since! Yay for veggies for breakfast! After a few glorious months without any reactions (and also eliminating corn, soy, and...
  5. Oh well it didn't turn out so well. I did use chili powder and hoped that the nightshade connection wouldn't be so strong. But it upset my stomach. I don't think I have it written down anywhere now. It wasn't so great. I'll have to try again with some cider vinegar and honey. Sorry to disappoint. But thanks for joining us here! We can always use...
  6. Good question. My first test was the celiac panel, which came back normal. My doc then referred me to a gastroenterologist, who ran some blood and stool tests but not a full nutritional panel. The results showed that I did not have anemia (in fact, the opposite with higher levels) and did not have malabsorption issues. I do not know the names of these...
  7. Nc Dave, fermented cabbage, or Kim Chee, tastes differently than straight up cabbage, IMHO. Guess you could also try sauerkraut? I haven't found any yet that is gluten, etc., free, but I also haven't looked very hard. Bigos stew, or polish hunters stew, is cooked with sauerkraut and sausage, along with mushrooms and some other things. These might be options...
  8. Oh I almost forgot to post about another discovery. It's so easy and tasty! Pork tenderloin cubed in the crock pot with apples, oranges, garlic, some coconut flakes, raisins, and a scant half cup of coconut milk. Oh, and curry, lots of curry. It was soooooooo good! It tasted sweet to me, something I've been craving, but my DH did not think it was sweet...
  9. Yesterday I made pizza! The almond-coconut-egg crust covered with a garlic sauce and topped with artichokes and mushrooms was delicious! I did include a bit of grated mozzarella cheese, as I can have a bit of dairy now and again without the rash appearing. I just ate some again for breakfast. YUM! The kids ate regular cheese pizza with tomato sauce...
  10. My reaction to soy is severe stomach pain, nausea, and maybe D. It's been awhile. At first I wondered if it was a gluten reaction but it wasn't as bad and didn't last as long. As for foods, well, now that I'm avoiding gluten, dairy, soy, corn, and nightshades, I am spending a LOT of time in the kitchen. EVERYTHING has to start as live food and is cooked...
  11. Black eye peas cooked with gluten-free smoked sausage Collard greens and bacon Both cooked in chicken stock I also made pasta for a group. I cooked my rice pasta and defrosted a carrot sauce. Everyone else had regular pasta and tomato sauce. Oh, and I made meatballs for everyone. My apple dessert of late is to combine it with dates and nuts. It...
  12. My problems with dairy started about 10 years before I stopped eating dairy. My arms developed itchy red bumps. Then more. Then it started on my tummy. It kept getting worse, not better, so I finally realized it was something I was consuming daily. The bit of milk in my morning cappuccino was the culprit. For a while I could still tolerate ice cream...
  13. Thanks for the recipe, Bubbas Mom! We ate an AWESOME dinner tonight. Sautéed chicken served a top puréed parsnips and topped with sautéed leeks, kale, and bacon. DH named it restaurant quality! Recipe is from everyday paleo website. Really super!
  14. GottaSki, thanks for the sauce rec! Good idea I'm going to have to do that. How did the pie work out? I still have to make a practice paleo pie soon in preparation for our Thanksgiving dinner. I made a Caramel Pecan Bar with basically pecans and dates. There were a few tablespoons of coconut milk, and that seemed ok for me so I bought more. Lots...
  15. LOVE the idea of a food dehydrator! Ate leftovers again tonight. The carrot sauce goes well with everything...the spaghetti squash, the meatloaf, as a sauce for veggies... I'm really enjoying having a sauce to eat. Does anyone have any suggestions for other vegetable sauces to make? I make mayo. But what other sauce is free of ingredients fromThe...
  16. Spaghetti squash with ground beef, egg white (leftover from making mayo) and brown rice pasta Chicken, mayo, mixed veggies Spaghetti squash with carrot sauce And, SWEET! I made a paleo dessert with nuts and dates called caramel pecan bars. Awesome!! It was such a joy to eat something sweet for dessert. The puréed dates would probably...
  17. Breakfast: spaghetti squash with ground beef Lunch: chicken, homemade mayo, sautéed mixed veggies Dinner: TBD but I think meatloaf with a pureed carrot sauce. Maybe some rice noodles. Plan to boil the roast chicken carcass to make some stock to flavor some beans.
  18. Would you share your chop suey sauce recipe? I haven't eaten Chinese food for months, since avoiding corn starch and soy sauce.
  19. Breakfast: ground beef, leeks, spinach, eggs. Discovered we are out of onions. Horrors! Lunch: paleo pumpkin muffins Dinner: roast chicken and carrots I roasted carrots for a pasta sauce to eat tomorrow with homemade meatballs. I'm trying a tomato substitute for the first time. Kids will eat regular pasta with tomato sauce, I get brown rice...
  20. Hi Dejibo, I know what you mean about trying to cope with a sudden change in diet. That has happened to me, too. Sometimes I salivate over baked items, and I just have to remind myself that one day I may be able to eat them again. Meanwhile, it's "whole foods" for us. Meat, veggies, some fruits. Eggs. I also eat nuts, and I do liquefy them in my...
  21. One of my regular meals is to make chicken soup with carrots, celery, onion (mirepoix) and sometimes ginger, lemongrass, leeks, turnips, or whatever additions. The next day I make homemade mayo for chicken salad. The broth and veggies I put in the vitamixer with some other cooked veggies for a thick soup. Roast sugar baby pumpkin has been a favorite flavor...
  22. Hi all, It seems that once going gluten-free many of us find other problems arise. The above list (gluten-free, dairy, soy, corn, and nightshade free) seems to be a common one, along with totally grain free. Can we start a thread of recipes and meal suggestions that follow these restrictions?
  23. Hi Ashbil, I'm a bit new to the Gluten Free life, too. Mine started a few months ago. So this Thanksgiving will also be my first attempt at being grateful and gracious and NOT eat gluten. Fortunately we host and do almost all the cooking so I have control over the menu. The biggest gluten source is bread stuffing. My husband wants to cook a separate...
  24. OMG, Diana, that is HILARIOUS! It is adventures like these that keep a family laughing together!
  25. You've got a good list for yourself! I saw that Boars Head lunchmeat is gluten-free, but do you know if it's also soy and corn free? Their website gives me a number to call to ask, but I thought I would ask here first. And what kind of crackers do you eat? Are they paleo? I just made some paleo muffins w pumpkin that are delicious! But I may...
