I have been gluten free for a little over 2 months and while being on the diet I have become very tired, no energy, and issues with sleeping. Has anyone else had this issue? Could there be another underlying issue? It doesn't matter how much or how little sleep I get I am always exhausted.
That is interesting. I have found quite the opposite. Before going on a gluten-free diet I experience extreme fatigue sometime so bad that I couldn't force myself to get off the couch are out bad for hours in the morning. Then it would get worse as the day progressed. I've been gluten-free for about three months now. And all of the symptoms are gone. In fact, I am now running every day. This is something I have never done in my entire life.

That's great for Chat. I wish I could say the same for Memphis. In fact, we only have one gluten-free bakery and it is run out of someone's home. Have to preorder. But still it's nice to be able to get bread that I don't make myself.

You could try polenta. The texture is a little softer that grits. I live it with a little pure maple.

I am newly diagnosed. Two months now. I have been Glutened twice since my original diagnosis. Well, today I did it again. This time it was my own fault. I read the back of the label, but it was early in the morning and I was not quite awake. I totally skipped over the ingredient wheat starch. And that's not even one of the hidden ingredients it clearly states wheat. I could kick myself.
My symptoms now are explosive diarrhea, extreme fatigue, headache, And insomnia.
How do you deal with being glutened?
